Making real wholemeal bread at home will be very simple if you follow our recipe. The recipe requires only 20 minutes of preparation, for the rest we opt for a long leavening in the refrigerator for the whole night and then 3 hours the next day, time that you can use to do something else. In the family we eat it every week as it is a quick and practical recipe: delicious for breakfast with jam, lunch and dinner. Thanks to the folds it is honeycombed inside and crunchy outside also because the recipe is highly hydrated.
INGREDIENTS FOR 1 and a half kg of bread (two loaves)
• 1 kg of stone-ground wholemeal flour
• 700ml of water
• 6 g of brewer's yeast
• 20 g of salt
• Extra virgin olive oil (to grease the bowl)
