I've had a few different ones. Shrimp, soft shelled crab, roast beef. The soft shell crab was the best but I think that had more to do with the restaurant than the protein on the sandwich. You gotta watch out for places that call it a po boy but use cheap bread instead of a baggett or cheap out on the meat.

You're exactly right, cold cut poboys were sold all over New Orleans at one time especially at lunch time, most people (outside of New Orleans) aren't aware of this because they're only used to hearing about shrimp, roast beef, fish and other fried meats and not anything else, they aren't aware of our (Patton's) hot sausage poboys either.

Lol, my dad always said it was because, when they were first a thing, they simply put on it whatever seafood they'd caught that day. Could have been shrimp, crab, fish and it usually was a mixture. So, it was named a Po Boy because it contained whatever got caught. (In a 'that po'boy got himself caught' kind of way. Now we choose which meats we put on it. But I found that origin story fun.

You can eat a meal like that every day and stay thin. You just have to have the other meals of the day light and full of veggies. That looks like a meal with about 800 calories (1000 at the most). An average person needs 1800-2200 calories a day. So you still have 800 to 1400 calories to distribute between breakfast and lunch. It's a lot of food if you choose vegetables, proteins, low fats and some simple carbs. First of all you need to understand how many calories you need in a day. It changes with your height, weight, age, style of life. There are online calculators if you want. Then you need to learn how to count calories (there are apps for that, you'll just need a scale). Understand that a lot of calories are in condiments and fats, so be very careful when you use sauces, dressing, oil, butter... Try to reduce sugar too, but complex carbs are important (bread, pasta, rice..) Vegetables are basically always good for you. They are low calories, very few fats and carbs, a lot of water. In many diets you can eat as much vegetables as you want, you just need to control the condiments. Like, for a big bowl of salad, 10 grams of oil (a teaspoon) are enough. Fruit is ok, one or two fruits a day are fine. Meat, fish, eggs, all fine if cooked in a simple way (grilled without oil or other fats for example) At this point you should have all the info you need. The first months it's better to keep a diary of what you eat and how many calories every food you have eaten had. With time it will become automatic. There are also apps that help you with the macronutrients, so that you are sure you are not missing important nutrients in your diet. Then, if you can afford it, seeing a registered dietitian it's the best thing. They can explain you how to regolate diet in order to stay fit without sacrificing yourself or restricting at every meal
