Good recipe and great idea to swap out the baking soda for apple cider vinegar, I've been looking for a more natural product to achieve this result and will definitely give this a go at the weekend, cheers buddy 👍

Try this. Lower the yeast amount to 1g and rest it overnight. That will ferment the starter. Basically the "secret ingredient" is the apple cider vinegar which mimics fermentation. Pretty good techniques overall. Good video for people that don't bake bread often.
@gverlies14 күн бұрын
I totally agree about the yeast. The vinegar is something I want to try, but why sugar? I never use sugar, and fermentation and taste are both very good. And people already use too much sugar, while bread can be such a natural product
@The_Original_Big_Daddy13 күн бұрын
@@gverlies I agree with you about the sugar, though to be honest when I'm starting a poolish or biga I usually add a few drops of honey. A little more energy for the yeast.
@gverlies13 күн бұрын
@@The_Original_Big_Daddy a few years ago, I experimented with sourdough, and I never used sugar or honey. All the energy came from the flour. Maybe you can do a test : one only yeast, flour and water, and one with a few drops of honey, rest overnight side by side an see if there’s any difference :-). I’m very curious if there’s any difference.

What do people think you could make the bread, let the bread rise and then bake it in five or 10 minutes time. Seems like a good and simple recipe to me if that’s too much for most people maybe they should be baking in a bread machine. Of course it’s not gonna be as good as a handmade and hand kneaded bread. I give it a thumbs up. I’m not looking for a bread that makes itself. 👍

I believe the reason for the vinegar is that yeast loves an acid environment and the small amount of vinegar provides that. I've seen it recommended in bread making with sourdough.

I make this bread very often. Believe me, it may have been perceived that way on camera, but it is a very easy and time-saving recipe. To reduce the fermentation time, put the dough in a warm oven. In other words, heat the oven to 100°C/ 212°F for 15 seconds and put the dough in the oven. The oven should be like summer heat. The dough will ferment quickly.

I’m sure it is good, but personally I prefer your simpler recipes. This one is long, complicated, and has many more steps than many of your other bread recipes. Too time consuming for someone who lives alone and just wants to make a simple loaf of bread. But for many others no doubt this is worth the effort. But I have a question: What is the purpose of the vinegar? I haven’t seen that in other recipes, except in one or two of yours.
