Avocado oil is best out of plant oils. I'd suggest animal fats: butter ghee lard and tallow

To be safe, only use fats solid at room temperature to cook with: They are solid because they are high in Saturated Fats. All unsaturated fats, even monounsaturated Oleic Acid Olive Oil, can become rancid when (over) heated and/or oxidized (aged), this includes Animal Fats which although having a higher Saturated Fat content, also have a higher Oleic Acid content. I recently had a two week bout with inflammation due to cooking with rancid Ghee. Coconut and Palm Oils have the highest concentration of saturated fats.
