The obvious explanation needed here is how long must coffee be separated foods that bind to polyphenols? Do you have to drink coffee/tea on an empty stomach or is several minutes after a meal OK? Is it specific amino acids only? Is there something else they can bind to to free up coffee? The problem is, this is way too vague. You need protein to survive and if it takes a couple hours to digest food, especially if you add fiber or fat, you’re going to have to wait until 5pm to finally have coffee after your late breakfast or the polyphenols will be mating with coffee in your stomach or gut instead of your cup so it’ll all be for not.

There is conflicting research on the effect of dairy on coffee's anti-oxidants and polyphenols. Some research has shown an increase and other has shown a decrease. All agree that drinking coffee without milk lowers calorie intake which can help with weight loss. Try coffee both ways and listen to your body. Which way feels better?

I drink coffee in the morning with a little whole milk to get me going in the morning. I don't care about the coffee polyphenols because I get tons of them from other foods and the large amounts of green tea I drink all day long. Everything in context, and I don't like black and white directives like this one because one size does not fit all and in this case not gaining all the benefits of coffee polyphenols is not of consequence to me in my lifestyle. I don't eat dairy any other time throughout the day and I eat very few carbs on a keto-style lifestyle with intermittent fasting and eating natural organic foods. Sorry, not going to give up my daily splash of (whole) grass-fed milk because of this!

@@lucylu9792 She had been using literal cream/milk not creamer. You know the canned ones used in curry recipes? Any can of organic coconut cream you can find at Trader Joes, Whole Foods, Sprouts will do. If you’re looking for something that has a bit of sweetness, I’ve heard of Anthony’s Organic Coconut Creamer which has a little bit of sugar. You can get that online. Pay attention to the label.. most “coconut milks” are full of additives.

Cows milk is for baby cows that has four stomach compartments but goats milk is close to human milk. But I gave up dairy a long long time ago along with refined sugar and use honey which has living enzymes. I gave up deadly night shade I eat more nuts leafy home grown veges including watercress and more, my BP at rest age 71 is maintained at 110/70 I have no Auto immune deficiency, blood sugar 4.5 and haven't used toilet paper for very long time. Dr Gundry has been an inspiration to me for many years. I live in the Central desert of Central Australia I harvest rain and also have a reverse osmosis. Using info from this content and others, I just made the best pot of coffee I ever had. I put 140 g of coarse ground coffee into 4 lt of slow boiling water for two hours. I then set the Instant Pot to slow cook on high for two hours and then overnight on Keep Warm. I used a paper filter, slowly reheated to a simmer and added two Tbs of coconut milk. Wow! Yeah its a long process but I have a 4 lt carafe of the best coffee in the fridge that will last for days.

This is great advice, but not sure why anyone would want to ruin a good cup of coffee by adding milk and sugar. I prefer my coffee light to medium roasted, and enjoy the flavor experiences with nothing added. Since I’ve been doing this, I am enjoying the coffee notes, as in caramel and fruit flavors. In my opinion adding anything else is just ruining the flavor experience.

I actually do not drink coffee for the poly. I will not stop adding milk because i do not like it without it. I love that you have given us this information. Maybe i will change my taste. My strategy is to use full cream milk with extra thick cream, thus minimising the carbs. I also add a little glycine for sweetness. It gets me through until my OMAD at 3pm. I am pretty sure that once the body uses the protein the polyphenol is released. The British do not have lousy longevity, it is higher than the USA. And the difference cannot be blamed on tea consumption. There are a thousand other factors. It's not as if you need polyphenols from your beverage, you can get them from other sources.

I like Dr Gundry's presentations. Occasionally though he goes a little overboard with assertions. First off, mentioned Japanese and Chinese have extraordinary life expectancies (seemly thru use of teas). That is half truthful: Japanese exhibit world leading longevity. The Chinese (PRC), no. They are quite far down the list. Second, when I look at the amount of protein contained in almond milk per serving (which is more that one uses for coffee) is all of a single gram! Very low amount - don't think that is enough to material alter the coffee's polyphenols. The one thing I do agree is that such "milk" may contain higher levels of glyphosate. Idk, maybe seek an organic version to eliminate this particular issue?

A note on the coffee roast and don't know if it adds anything to the discussion. While in Costa Rica we visited several coffee bean plantations. All of them stated that the so-called 'dark roasts' that went to the USA were actually their rough and waste beans that would otherwise be taken off the market. They dark roasted them, packaged them all up...and sent them to US in the USA where we devour them. Since then, I've always stuck with the light or med roast and simply brewed them a little longer. Switched from the drip coffee makers back to the percolation or 'campfire' method. Don't know if it works better, but I'm in my late 60's and still on this side of the grass.

Light-roast is good, and has the most caffeine, best for a morning jolt. The more the beans are roasted for longer time, the more denaturing of caffeine molecules happens. Dark-roast is sometimes misunderstood as "strong" but its just burnt beans, and the caffeine molecules are diminished to fewer numbers. Medium is a nice in-between, great full-bodied flavour, and relatively moderate caffeine level.

And as for longevity, if we compare different countries it would be correct to draw the comparison across the social groups with similar attributes, like income, level of education, lifestyle specifics, etc. China is 1.5 billion and it's probably more diverse socio-economically than the UK.

Dark rosts are easier to produce because it is shock roasting of coffee. Slow roasting is costlier as it takes more time. My dad used an old 60kg machine for that. For darker roasts we just more Ethiopian Siddam instead of Brazilian Santos. Indian Malabar blends were used for clients who loved it least strong.

I read in an article in a bodybuilding article years ago that a small amount of milk binds to the acid in coffee, neutralizing its acidity. thus, a small amount of skim milk in the coffee can actually keep the acidic from affecting your body.

Am 64 been drinking coffee with milk and sugar since I was 10. The reason is tasts so good with breakfasts when I was a kid. If I drank milk or OJ my mouth would get dry and I’d get thirsty right away. Coffee nicely quenches my morning thirst. These days I drink 2 cups first with sugar and milk second black no sugar trying to cut down my sugar intake.

If the extra calories aren't an issue for you, you can also use heavy cream, which has lots of fat but doesn't have the protein (or lactose either). It takes less of it to whiten, so you probably will only be doubling the calories over milk.

What is totally missing here is a scientific reference for this claim. As someone in the comments probably rightly claims, the proteins are broken down into amino acids where the polyphenols are released again, if they are bound at all.

It would be nice if people appreciated the taste of coffee. So many people mask the flavor of coffee by adding sugar and milk products. They truly never appreciate the true flavor of coffee even though they drink it everyday. My suggestion as a beverage manufacturer who also manufactures cold brew coffee is to find a good local roaster and get the lightest roasted coffee that they sell. Then cold brew that coffee and when you taste it you will realize what you have been missing all along. Dairy products truly ruined the flavor of good coffee. And now knowing about the polyphenol absorption should be motivation for everyone!

Caffeine is an alkaloid which is hard to absorb. Add a bit of cream and it absorbs better so you get a caffeine fix with less coffee. Personally I prefer my coffee with a tsp of mct oil and a tsp of Ghee in the morning. If I want it creamier I add a raw egg yolk and blend. Sounds disgusting but actually quite good. My take on Bulletproof and it’s filling.

I'm fit and healthy and enjoy dairy (goat) milk coffee. Once you have had fresh, unprocessed milk in your coffee, it's hard to go back to anything else. I'm not really interested in polyphenolys, or the latest nutrient buzz words. I like the taste of milk, I used to keep dairy goats. Put whatever you like in your coffee.

As an avid black coffee drinker, and usually iced black, I was wondering if it is better to use a machine that grinds the beans and then brews the coffee (typical coffee paper filter machine), or alternatively, one of those automatic machines where the beans are grounded and the drink chosen is dispensed. I'm one of those people who even if I was lactose intolerant I wouldn't care! Love a cold glass of milk going down my throat, an ice cream or milk shake on a hot day or a wonder cheese pizza. Also for some reason dairy products settle my stomach like nothing else. All that being said I think the reason a lot of people but sugar and milk (creamer, half and half, etc.) take the bitterness out. I have prepared coffee that is freshly ground and using a coffee press. it tastes totally different and only then can I take it black - weird how it's not really bitter that way. I can't really stand the "milks" like soy, oat, coconut, etc.

I'm wondering how the milk proteins in raw milk affect the polyphenol concentration of foods. I read the research about blueberry antioxidant activity being blocked by consuming blueberries with yogurt, but would this also apply to raw dairy products? Could it be that the proteins, immunoglobulins, antioxidants and enzymes present in raw milk and dairy products could have a synergistic effect on the polyphenols instead (that pasteurized dairy products have lost)? I tried to look for research clarifying this but was unsuccessful.

Maybe, but in that case you would have to have iced coffee. As adding raw milk to boiling water would make the raw milk pasteurised.

This video could be wrong or inaccurate. I see evidence to the contrary online in studies. Milk seems to improve bioavailability. Much respect to what he has to share but he should really show his sources. This is not pre-internet days where that would be normal. People want first-hand information now.

Gundry is just looking for something else to do a video on. Most people thrive on dairy. I am perfectly lactose tolerant; perfectly able to digest Casein and saturated milk fat. Love cheese and never had a negative reaction to any milk product from yoghurt to double cream. Most people are just like me. There is some evidence that American dairy products tend to over sterilse so that you never gain the enzymes that help digestion, but just eat some live yogurt once in a while - you should be fine. So don't run away and tell everyone to stop enjoying their coffee!! It is possible to completely remove the soul from your daily life, but it's best to be selective.

@@juliettailor1616 I do not. Raw milk is dangerous. I rely on minimally pasturised milk of the sort we have in the UK. THis takes the milk to a high pressure low temperature for a few seconds and stays unhomogenised. In the warm it will only last day or two, but seems to be healthier that way. There were attempts to lure the UK to accept UHT from the EU some years ago but people thought it disgusting. high temps ruin the taste.

As a keto fan, I was drinking my coffee with MCT oil. After listening to Dr Gundry book - the Keto Code, I bought goat milk and really love coffee with it. Now, I have to eliminate it again :)

Even if you skip the cream in the coffee what if you are eating a cheese omelet with it? Tried black coffee with orange slice in it today improved it, hey lemon slice works for black tea. Like Armenian Coffee but has sugar.
