To be honest I think the color being more visible actually had to do with the lighting. I remember looking at it throughout the day and sometimes I could see it and then it just seemed barely noticeable at one point. It looked best when it was dark outside so I am wondering if it has something to do with uv light hitting it and the way our eyes pick the color up. 🤔 Who knows! And of course! You were one of the first people to start commenting on this channel and I always thought it was so cool that your name on here is Prometheus. I had to throw the corny Greek mythology joke in there but for real thank you for your support since the very beginning!

Chokecherry juice stays purplish after cooking! 3 cups flour 1.5 cups sugar 1 Tbls Baking powder 1 tsp salt 1 tsp vanilla 2 sticks butter 5 eggs 2 cups chokecherry juice Mix it well, bake at 350 for 40-60 min. When done, turn off oven & leave it in for 15 minutes to finish from the residual heat. Ends up mildly sweet & textured like banana bread. :)

Oh but avoid aluminum! (Baking powder has it sometimes) It's high in copper and may make mildew-resembling green splotches when they react.

That sounds delightful! Yeah there are a lot of great berries that keep color after cooking. I am just stubborn and wanted to make it work with the violets haha. The anthocyanins in them just aren't as stable I suppose. Thanks for sharing!
