*** Please refer to the TIP at the bottom of the expected questions.
I made a crispy apple pie that can be made without an oven.
It's like a crispy pastry because it's textured layer by layer, so it's really delicious.
The ingredients are very simple and it is not difficult to make.
This recipe is inspired by the curry puff.
*** Weighing is scale (g), rice spoon (tbsp), and teaspoon (tsp).
[10 things]
✤ Dough 1 (outer dough)
150g All purpose flour
40g (6.5tbsp) Vegetable oil
55g Water
8g (1tbsp) Sugar
2g (0.5 tsp) Salt
✤ Dough 2 (inner dough)
65g All purpose flour
36g Room temperature unsalted butter (salted butter can be used without salt)
3 pinches of salt
✤ Apple Peeling
220g, 1 apple (medium size)
16g (2tbsp) Sugar
28g (2tbsp) Honey (sugar available)
15g Unsalted butter (cooking oil available)
6g (1tbsp) Cinnamon powder (can be omitted)
6g (1tbsp) Starch powder(any type)
A little water (if needed)
✤ TIP
The state of the dough may change even with the same amount depending on the flour brand used or the humidity of the day, so add or subtract water.
Make the dough soft rather than elastic.
The fineness of the pie paper varies depending on the thickness of the dough.
The vegetable oil I used was grapeseed oil.

that crispy flaky multiple layers stuffed shell really looks like malaysia traditional food. we called it as karipap if the shells are smooth and flat. this one is more like karipap pusing (bcs of the layers). karipap = curry-puff and yes, with curry+protein+potatoes filling. i believe other countries have this similar type of food, like empanadas.

@egomaniac7230
@egomaniac7230 3 жыл бұрын
I think you can do it but make sure to chill them before putting it in the oven and make sure the butter doesn't melt too much while working with the dough. I would also recommend leaving the dough thicker than shown in the video and cut into the dough for air circulation. You can also pour egg (and sugar) on top of the dough if you want it to become golden in the oven. I have been making pies like this in oven but with a different recipe that I don't even remember where I have gotten it from originally and I have made editions to it myself. It results in a layered and flaky recipe that my parents and sister love. I can tell you if you want.

Egomaniac can you share your pie recipe? i would be really happy, i am looking for a pie recipe that bakes in oven for new year party
@egomaniac7230
@egomaniac7230 2 жыл бұрын
@@diantharu1136 sure! This recipe gives you around six medium sized pie pockets. 270g all-purpose flour 170g butter 135g water\or\ 130gr milk Half a cup sugar (add more or less if you want) All the ingredients have to be colder than room temperature specially butter, so I just take them out of the fridge and use them. If you have a mixer, pour flour and butter cubes into the mixer and mix them together until the butter is powdered. If you don't have a mixer or food processor: Pour flour in a bowl. Cut the butter in cubes and dump the cubes into the flour, then with a spoon or knife (or anything that is narrow enough to not to smoosh the butter) cut into the butter cubes to make them smaller and smaller and at the same time mixing them with the flour. Once the butter is no longer distinguishable, it's done. You don't want the butter to melt so if you're making this in the summer, make sure to chill it if the butter started to melt. Add your sugar. The original recipe didn't even have sugar in it but without it the crust will taste really bland. If your pie filling is too sweet then don't add or add less sugar in the crust. Then, you will add your chilled water\ milk to the flour and butter and mix until you get a soft dough that doesn't stick to your hand. Adding water was in the OG recipe and results in a more flakey pie crust but imo it's too dry (really really dry. It-sticks-to-the-roof-of-your-mouth dry. Only my mom likes it.) so I add milk instead and it makes it softer and tastier. You don't have to follow my exact measurements as ingredients are different in different parts of the world but what you're looking for is a soft dough that doesn't stick to hand but not too soft that it can't hold a shape and not to dry that it cracks. After the dough is done, you put it into the freezes for 20 minutes. You can skip this process if the weather is cold and the butter in the dough is one of those butters that doesn't melt easily (like margarine); you just need the dough to be cool. After you make sure its chilled, you take it out and get ready to roll it out. You roll it out to a desired thinness and flip one sides of the dough on to the other like you want to fold it and roll it out again. Continue this process a few times. The more you do this the more layered the crust will be. If you're short on time, don't do it at all. The whole process of powdering butter with the flour can be enough for the dough. After this process chill the dough again for 10 or so minutes (20 if you didn't do it before). Then take the dough out and roll it out again to the thinness that you want and divide the dough into squares. Pour your pie filling inside those squares and fold them like in the video, into pie pockets. Make sure it is sealed well enough and then make three gashes on the upside of the pie pocket for air circulation. Then brush them with eggwash and pour some sugar or sesame seeds on them and put them into the oven. Depending on your oven the baking time differs but I would say 10 to 20 minutes. You just want the crust to bake and the eggwash to turn golden.
