I used to watch this when I was young. Yan didn't give a *shit* about cross contamination, cooking with raw eggs or anything like that. And back in those days we didn't constantly have romaine lettuce or this or that that could poison you due to contamination from factory farms cheaping out on their farming methods. Although a few years before I was born there had been a terrible problem with botulism in canned goods, so food scares were not unknown. Botulism is still an issue in certain kinds of home canned goods, but its been mostly eliminated--probably completely eliminated--from commercially canned goods.

@@PhilMante He didn't just make money through his restaurants though. Stephen Yan was genuinely famous across North America throughout the 80s and early 90s. He had dozens of cookbooks (my mom has every single one), his own line of cookware, and other affiliate deals (e.g. Yan branded food). He had a full team of demonstrators attending all big trade shows and consumer events. He was big enough to get a guest spot on Letterman and a bunch of other American daytime and late-night shows. We don't really know about him now because his retirement was incredibly sudden and his presence disappeared before the internet became mainstream in the late-90s
