I've never considered goose for a Holiday dinner but I really like this recipe for wood-fired version. When I was a kid growing up on the farm my Grannie had a pet goose that used to chase me and peck at me. I hated that goose and would have loved to have seen it cooking on a rotisserie! Very excellent video, I've been thinking about cooking a goose for a very long time on my 26 Weber kettle. Thank you for the tip of boiling the skin a little bit with hot water to separate it from the fat.

That goose Looks really good! The Rotisserie for the Kamdo Joe is really a cool thing. With the fire on both sides the kamado seems to be a very good kettle to Keep the heat and reflect it to the bird. So much better than in a normal kettle. Wish you a nice Christmas, have some great time with Family and friends! Was a pleasure to see your channel getting better and better this Year (and at least your car on the other side of the road ;-) !

What was the total cooking time? Did you ever close the lid? I am cooking a goose on Christmas day on my Big Joe, and will have to decide whether to use the Joetisserie or cook indirect.

It is so much fun to do.. but doing it like this requires keeping an eye on it. If you don;t want the hassle go for an oven tray. What ever you do ... make sure you catch the drippings.

OMG! Cooking a goose on the spit looks very scary! I want to do that!!! We've done only a couple of Christmas geese over our many years. But, in the oven. I really do want to give the spit roast goose a try! Thanks!

question : after 20 minutes rest, even with tin foil the most of the goose meat is too cold , no ?
