Adding a small amount of sugar is the science to enhance the flavor (just like salt) and compliment the cheddar in this dish. The amount of sugar he's using isn't going to sweeten the dish. Sugar balances both salty and sour flavors in dishes.

Yes! I've been talking to myself about that. 🤣🤣🤣 I keep saying that's pepper jack not Monterey Jack, but dang I want to add that pepper jack to my Mac & Cheese. I don't think my mother would care for it though for Thanksgiving. I'm going to do it one day just for me though. Heck yes!!!
