Its probably because they believe they deserve high class stuff and the fact that he isnt taking her to a classy place reflects his respect for her, which has some reasoning behind it but not as much as this imo but he intended to take her to a classy place but couldnt and it was her fault he couldnt. Its a red flag if your dates first choice is to take you to a fast food place instead of a normal restraunt. Honestly the stereotypical anime cafe date are a good example of a place to take someone for a date or socializing in general. It doesnt need to be a 5 star restraunt just a place thats 1 step above fast food places like burger king and mcdonalds. The cheesecake factory is not a fast food place so its not bad, though it can be seen as bad. Im surprised she didnt go the route like "oh you think ill like the cheesecake factory because you think im fat?". The management was ass but they always made it a point to keep shit clean. A fun fact: they don't have a freezer for meat because all the meat is fresh, never frozen (the cakes are frozen tho...sorry, "deep chilled" lol) All their stuff is made in house with fresh ingredients. No soup from a bag, no mashed potatoes made from powders. Just actual food made in house with good ingredients. It's funny to meme them but it's significantly better than most places.

If I had to describe the Cheesecake Factory in a single term, I'd say it's really good value. The food is good, they have a nice selection of option, the servings are *huge*. Staff was always nice whenever I went. But yes, it's a chain and they serve a lot of customers. It's not "exclusive". But I'd take it over any pretentious luxury noble restaurant any day. It's a good place to eat out for average people. If she's looking for that high-class experience, maybe she shouldn't be dating an average dude. Or she could invite him out. That's a classy lady.
