This pink noodle soup is so good it made it to my "Top 5 Noodle Soups in Thailand" episode! For years I thought it was a dish you leave to the experts (i.e. street vendors), but then realized that it's actually really easy to make at home! The secret is in the sweet-tangy-spicy red sauce that gives this dish its iconic flavour. Other than that it's just a simple noodle soup! I use pork broth in the video, which is classic, but you can always use chicken broth as a base instead. Enjoy!

About Pai:
Pailin “Pai” Chongchitnant is the author of the Hot Thai Kitchen cookbook, co-host of a Canadian TV series One World Kitchen on Gusto TV, and creator and host of the KZbin channel Pailin's Kitchen.
Pai was born and raised in southern Thailand where she spent much of her "playtime" in the kitchen. She traveled to Canada to study Nutritional Sciences at the University of British Columbia, and was later trained as a chef at Le Cordon Bleu culinary school in San Francisco.
After working in both Western and Thai professional kitchens, she decided that her passion really lies in educating and empowering others to cook at home via KZbin videos, her cookbook, and cooking classes. The Thai place I get this at in St Paul, MN called On’s puts tripe in it too. I never would have dared try tripe but fell in love after having it in this soup. It’s so good!

I made Yen Ta Fo last night. Honestly I was a bit skeptical as I had never had Red Bean Curd before. Well, I positively LOVED the soup!!!!! This is now one of my favorite dishes ever. Thank you!!!

Beautiful recipe! Thank you. A famous dish in Shanghai uses this red fermented bean curd to stew pork belly, called 腐乳肉.

A simplified version of a common Chinese street noodle soup called Yong Taufo. But the Chinese mix them with so many different types & flavours of chicken & pork dumplings. That was my childhood favourite but Yen Ta Fo is something I definitely know I can easily make at home!

Thank you so much for this! I love street noodles!! I am wondering if I could pre-make the sauce and the garlic (bottle them up?) and use it when needed? That will make the cooking so much faster on a busy day. If so how long can the sauce and garlic be kept in the fridge? Thanks in advance for your answers!

Pailin's Kitchen, One of my Favorite restaurants as a kid growing in Hollywood was called Siam, they made a won-ton soup that was so good. I know won-ton is a Chinese influence, But Siam would put a Thai twist to their regular won-ton soup and duck won-ton soup. To this day I have never found a Thai restaurant that has come close to their version, Siam has closed years ago and I miss their food tremendously. I have never been to Thailand, planning a trip soon so do you know if different versions of this soup are available at food markets their?

Pee Pai, i love yen ta pho, but out of all the noodles i've tried, nothing top the guay tiew gai, when is that coming? will u consider making noodles comes from another region noodles or dishes? such as chiang mai classic.... the num eill noodles and the num prik on, i love them.

Can you use the jarred yen ta fo sauce or will it not taste the same? I don't know if I can find all the ingredients to make the sauce myself :( but they do seem to have the pantai brand of yen ta fo sauce

bertie botts In Thailand, the red syrup used in most cases is artificial "sala" flavour. Sala is a type of fruit, sometimes called Salak or Snake fruit.

Hi, I found a sauce called "mabin yentafour" at an asian market one day. Do you know whats inside of it? The writing is all in Thai and I'm just wondering if I can use it to make this soup.

What else could you do with the yen ta fo sauce since you only used a couple tablespoons? I'm guessing the sauce doesn't keep for long

OK sis, I'll try to make Yen Ta Fo sauce for my noodle. it looks better than street yen ta fo, and I think it's similar Suk-Ki sauce (just use the sauce without other seasoning when you eat Suk-Ki LOL)

Suki sauce leads with sweet and then sour. Yen ta fo sauce leads with sour. If you have tried it, you'll know how different it is from suki sauce.

You often say to add a little sugar to cut down the salt - so why not just add less salt without adding any sugar? Or the sugar also gives another layer of flavour?

+S I don't actually add sugar to "cut down" the salt, but to balance out the flavour so your palate isn't registering just one flavour, but a more complex well-rounded combination of the 2. So we're not over-salting it at first, so you add less salt and no sugar, it's just gonna be underseasoned and bland.

+S "Cut the salt" =/= "Cut down the salt" - think when you drink cola while eating pizza. The acidity/bubblyness cuts the greasiness of the pizza. Same idea here.

You can use the dried shrimp to top any salads or soup. And for shrimp pasta it can be pretty salty, so you can make it as a dipping sauce adding sugar or add it to a cooking sauce to give it a little of a salty favor. Just be careful and don't use to much it can be pretty over powering.

+Amin Ori with shrimp paste, you can use it in almost every kind of Thai curry e.g. green curry, sour curry, etc. or you can stir fry it with meat or seafood and then add some white onion or spring onion or stink bean if you like, and for the dried shrimp, you can put it into your Thai papaya salad or do the Shrimp paste chili sauce.

+Amin Ori You can use Dried Shrimp in a Thai-style salad with Fried Garlic, Mint and Lime Juice, in Steamed Sticky Rice with Chinese Sausages, Mushrooms and Quail Egg, or a Rice Noodle Roll with Sweet Soy Sauce and Green Onion. Shrimp Paste can be used in some soup bases as well as a Thai Fried Rice with whatever you want to add in terms of protein and a Fried Egg. Just remember that a little goes a long way from a flavor standpoint. Of course Pailin could come up with a ton of ideas for those two ingredients. : )

Amin Ori Green curry, Sour curry, etc. or You can go to Mark Weins's youtube channel in his Thai recipes playlist, you'll see Thai dishes and how to cook Thai curry in southern style which is really yummy.

Im from singapore, This is like a thailand version of yong tao foo here! Red sauce isnt spicy though for us! Hope you do singapore dishes on Pais kitchen sometimes!!! Im a big fan of ya's!!! :)
