I looked up the premise of The Institute by Stephen King book, and it's a sci-fi-horror story about kids with special abilities (telekinesis, telepathy, etc.) getting trapped in a government-run asylum called The Institute. While the more logical explanation is that that book was just a prop they had on hand, my head-canon is that the director read the premise of the book and thought, "oh it's a book about kids with super powers, that would work for this" without knowing who Stephen King is or what his prolific work is.

I'm willing to bet they use some sort of basic AI transcription program to build their subtitles. It's not ever perfect, even less so when someone has an accent, or doesn't annunciate well, and you're supposed to go back through after and edit (you know like what your professional editing team should do for your professional videos) the mess ups.
