This will definitely be one of your favorite casseroles, all in one HUEVOS RANCHEROS. This casserole always comes to mind when we have family or friends over during the holidays, because it’s delicious, easy and quick to prepare. Everyone I know loves Huevos Rancheros so I never go wrong with it, and the best part is you can change it and make it your own. I have substituted the bacon for chorizo or breakfast sausage, and I’ve also prepared them without meat because simple meatless Huevos Rancheros is a winner all on its own. This casserole is always a winner in my house, and I know you will love it, I hope you give it a try. ❤️

INGREDIENTS-------350° (20-25 minutes or more if necessary)
4 slices thick cut bacon cut into pieces
3 large diced tomatoes (or 4)
1/2 large chopped onion
2 large jalapeños cut into strips/ seeds removed (optional)
1/2 large Orange Bell pepper (diced small)
2 large minced garlic cloves
Chopped cilantro (as needed)
1 1/2 Tbsp bacon grease
Pepper as needed
2 tsp Chicken Bouillon
Salt if needed
1/2 C. Water
6 Corn tortillas
Freshly grated Colby Jack Cheese as needed
8 Extra large eggs
Refried beans

It's the one I go to when serving guests, I always prepare all my ingredients at night and put them in the fridge in wellvsealed containers, then I just put it together in the morning and everyone loves it.❤😊👍😘

I love huevos ranchero, And whoever thought to make it in a casserole except for you my dear.😊 That is the best idea ever and it looks so good I can't wait to be able to make this. Now if you happen to see my comment tell me how it freezes because it's only me so if I make a big casserole like that I will put portions up to have later I just don't know about how the eggs will come out. But anyway I love love love it I certainly could cut it in half and just make four portions and the way you did the tortillas and what the beans on I just love this recipe and I love all your recipes but I think this is my favorite because I know how good that is❤❤❤

what a lovely, colorful comfort food...this looks so delicious, I could almost smell all the ingredients and I will..when I prepare this for our weekend Saturday brunch meal.....once again Rach, a masterful presentation, as usual...I never ordered this meal at our local Mexican restaurant..but this is so easy to prepare, I will do it on my own...thanks to you...again thank you for a delightful presentation..well done..

I'm going to look up to see if you did Spanish rice scratch. Yummy with your home cook refried beans from scratch. I just love the way you teach us, and most of all, the way you sample your food just makes me want to reach thru my phone and sample it, too. You're the best!! I remember that very old blender you used from your mom. I just laughed so cute!

When I seen the blender, it took me home to my grandmother house . Yes lots of good memories for sure. I love you and your way of teaching. How you tell us why you use sertin ingredients and how we can substitute. I have learned so much for you as I was such a simple cook not knowing how to use setting spices and ingredients.
