Hey i don’t know you will read this or not, but I am a Hong Kong chef and I deal with beef brisket a lot, here something I think you can improve, firstly you put the raw brisket into lava hot water which will seal the brisket instantly, the blood inside the meat can’t run out completely, in the end the beef blood taste will get in to the sauce which is bad, you should put the de-frozen brisket in the pot before you turn on the heat, you will taste the difference no matter it’s fresh or not, second always always put 南乳(google it I😄) in the sauce just a little bit but it will bring up the whole dish specially in heavy sauce dish(maybe the ingredients you write on the video already had it but in Japanese I can’t understand haha.) And then the onion always fried it almost at last and bring up the heat which keep it crunchy and smell good and sweet at the same time, no customer want a soggy onion Or green peppers. There is more you can add more detail you can add to perfect it, what oil you should use how high is the heat , how many water you put, what type of sugar you use many many thing,it’s my taste opinion and experience only maybe it’s Japanese taste no offence bro

As a Texan this is my recommendation: Put that brisket in a smoker @ 225 took til 203. As for boiling it, a moment of silence please.

Brandon, you mean caramelize the onions, right? I like to add cinnamon and star anise. Another thing that was not mention is how to handle the thick fatty layer of oil in the stew after the 3 hours of cooking.
