I thought it was a big white cake, decorated with star anise.... It's oil??? :shock: Edit: also, why strain the oil? Is it very fragrant after frying the spring onions and co? I have so many questions _(:3//)

I guess it is to filter out any solid piece from the oil

They did it to flavor the oil to reuse, they waste nothing.
In China, green onion oil is made purely from 万能ネギ。Maybe that’s a renovation by the chef

中華一筋 My family runs restaurant business in shanghai and we use green onion oil for noodle dishes“葱油拌面”. In most cases we don’t use lard (pork fat)as the oil base but I guess it’s considered too heavy to local ppl in shanghai. Overall this is a great renovation!

Water Melon hope you like it. This green onion oil goes to noodle with soy sauce directly. We stir it and add a fried egg on top of the noodle to make it a nice breakfast. Usually this noodle dish is served with Beef curry soup in Shanghai. My generation grows up with this combo as one of the breakfasts. Even I don’t live in shanghai anymore, I still make this at home for my kids sometimes
