Wow! That looks fabulous! I'm going to try that (in the spring! It's too cold here in Oklahoma now) Many years ago (1990ish), I worked at a seafood bar and grille and they did a red onion marmalade that was spectacular! I didn't know the backstory of the Oklahoma burger, that's pretty interesting! Didn't expect it to go that far back! I have been doing a twist on the oklahoma burger, too. I call it the "Oklahoma Mad Goat" (OMG) - it's definitely quite far removed from the original. prep: I make balsamico caramelised onions. (low heat frying onions in some butter, till quite soft, add a little bit of sugar, salt, garlic powder and balsamic vinegar to taste, cook until sticky and holding together) finely dice some fresh onion have fried onion ready slice some soft white goat cheese (brie or camembert work well for those who don't like goat cheese) wash and dry some arugula toast buns and fry a burger patty like in the video just with the caramelised onions and goats cheese on patty tiny bit of mayo on both buns some dijon and the diced onions on the bottom bun then the onion-cheese-patty a bit of a smokey brown bbq sauce arugula and some of the fried/crunchy onion on the top bun (should stick thanks to the mayo) done

This year we learnt how to cook a Smash Burger every-which-way. Then we had a great tour of LA Burgers. The highlights for me are all the Ol'Timey iconic Burgers you have saved from disappearing into history. My favourite Burger - Hodad's. Great video as always Greg. Can you do a Boll Weevil Steer burger copycat? Their burger sauce was better than anything today and that includes Big Mac sauce and InNOut sauce, which I love both. Happy Holidays!

One thing many people on KZbin don't mention or understand is onions. There are strong long keeper onions and sweet short keepers. I'm almost positive that they used the long keeper yellow onions. Not the sweet yellow onions. There are various types in all the colors of onions. They don't offer them in the grocery stores. You can also ferment the onion like you would sauerkraut. I would personally use mayonnaise instead of yellow mustard. 😮

I really do like these "very simple" kinda burgers. I don't need a burger piled up like a skyscraper. What is it good for? Few ingredients. Good quality. I'm still experimenting with mayo. And from that: remoulade and burger sauce. There are so many options! Just grinding nori seaweed to a powder for that Nowon burger. You may have overlooked my question on it: what kinda seaweed is that guy using? I'm trying nori, now. But it also could be kombu. (One guy just flavoured the vinegar for his mayo with kombu. Not longer than 2hrs, he said.) It could be wakame. I need to take a seaweed class, haha! Happy holidays from the far north of Germany!

I do like dill pickles but I think Famous Dave's sweet and spicy pickles might be good here. They are like a hot bread and butter pickle. Really good on burgers. Have a little heat in the background.

It's funny how Oklahoma lays claim to the onion burger. I suggest you go to Salina Kansas and visit Cozy Inn burgers. They just celebrated their 100-year anniversary in 2022. They started in 1922. Onion burger sliders. Before any onion burger started in Oklahoma. Even White Castle started in Wichita . Tried to claim to be the first. It was Cozy Inn in Salina Kansas. Check them out for yourself.. When you go into Cozy's, you wear the smell home. You can walk into work after eating at cozy's and everyone will smell you and say, you ate at cozy's didn't you. Really! Go check out Cizy's in Salina Kansas. You'll be impressed. And they were way before any Oklahoma onion burger.
