very interesting setup with the machine seemingly built under the countertop. Does it feel a lot more intimate with the customers being able to watch you? I almost like having the privacy of a big machine to block the guests view from me making their coffee and having them be surprised with a cool design lol.

Can someone explain what the first two tools are for when he is pressing the espresso? I don't mean to sound ignorant but it seems completely unnecessary.

I would guess the first one has needles in it to break up any clumping, which can be helpful (though with a commercial grinder, clumps shouldn't be a regular occurrence). The second is a leveler, which a lot of people (me included) buy, use a while, then stop because it doesn't seem to do enough to warrant the extra time or energy... but definitely doesn't hurt anything either.

Lel, what I do is I'd shake the milk instead of steaming it. And just pour the espresso.
