I just feel that the workflow of this cafe is so hectic, makes it kinds difficult to make multiple drinks together. The aesthetic is nice but very inefficient workflow setup. Lumberjack is wayy better

100% It’s illogical. He weighs the coffee down to the 0.01gram for consistency, taking up previous time…then proceeds to eye ball the amount of milk and it’s temperature therefore irradiating any consistency

Any competent barista knows how to consistently produce the correct milk temperature and or texture without needing a thermometer. Also eye balling the amount of milk is normal, wasted milk is expected and can sometimes be necessary in order to keep consistent quality and speed.

@@keiranheywood again. If you’re going through the hassle of weighing down to the 0.01gram. Which literally has negligible difference to taste and consistency, then eye balling the milk actually has a more impactful affect on consistency…therefore not taking the same effort = irradiating any gain in consistency you get from weighing down to the 0.01Gram…

@@him333-i4p It’s actually 0.1gram***. Which is exceptionally important to stay consistent with because perfecting the espresso is the most important part of the making process. 0.1 gram usually wouldn’t make a difference with taste however 0.2 grams or more could. Overestimating the milk amount shouldn’t affect the taste if you know how to handle splitting the milk however underestimating could cause an unprofessional texture.
