一起来做传统“老婆饼”。外皮采用了软面团来制作酥松的千层酥皮,内馅采用了冬瓜条,椰丝片,白芝麻来制作糯米馅。烤前表皮刷上两层蛋黄液再撒上黑白芝麻。新鲜出炉的老婆饼,顶部的黑白芝麻更加衬托出表皮金黄色来,食欲满满。掰开来,酥松的千层酥皮显露,加上内馅软糯拉丝,充满芝麻冬瓜糯米香~甜度刚好。满满古早味~
收藏方式:做好温吃口感最佳。冷却后收密封容器,室温3-5天。要保留更久,冰库冷冻,吃前Toaster弄热回温回酥再吃。
Let’s make traditional “Lou Po Beng/Lao Po Bing a.k.a. Wife/Sweetheart Pastry”. The outer crust is made using soft dough for fluffy flaky puff pastry, inner filling is made of candied winter melon, coconut flakes, and white sesame seeds to make glutinous rice fillings. Before baking, crust is brushed with two layers of egg yolk and sprinkled with black white sesame seeds. Freshly baked Lou Po Beng, black and white sesame seeds on top bring out crust golden color, so appetizing. Tear apart, fluffy flaky puff pastry is revealed, combined with soft glutinous stringpull fillings, full of sesame, winter melon and glutinous rice flavor ~ just the right amount of sweetness. Full of ancient flavor~
Storage Method: Best eaten warm after baked. After cooling, store in an airtight container at room temperature for 3-5 days. For longer storage, freeze in freezer. Before eating, reheat with toaster, let warm, to return flakiness then only eat.
♦ Ingredient 食材 (8pcs Lou Po Beng 老婆饼)
=Water Dough 水皮 (8pcs, 24g/pc)=
100g All Purpose Flour普通中筋面粉
20g Caster Sugar 细砂糖
0.5g Salt盐
30g Unsalted Butter (Soften) 无盐牛油(软化)
50g Water水
=Oil Dough 油皮 (8pcs, 13g/pc)=
70g All Purpose Flour普通中筋面粉
43g Unsalted Butter (Soften) 无盐牛油(软化)
=Fillings馅料 (8pcs, 30g/pc)=
62g Candied Winter Melon(cut into small pcs) 糖冬瓜条(切碎)
10g Frozen Coconut Flakes(cut into small pcs) 冻椰丝片(切碎)
20g White Sesame Seeds白芝麻
100g Water 水
20g Caster Sugar 细砂糖
0.5g Salt盐
25g Unsalted Butter 无盐牛油
45g Glutinous Rice Flour 糯米粉
=Toppings 顶部布置=
1 Egg Yolk蛋黄
Raw Black White Sesame 生黑白芝麻
(Preheated Oven 190C: 25minutes) (Top Bottom Heat, No Fan Force, Middle Rack)

老师,想請問你一下,我的家也是用你这种电池炉,你煮東西是專用不粘锅还是白钢的鍋头,我用自钢的鍋头,他炒東西还没有好,鍋底就黑了,很難煮,电炉的火是中间,煤气白钢就不会黑,謝謝

@@iwen777 后來我就不用白钢,用不粘锅炒東西比较不会黑,可是不粘锅用久有会黏鍋,謝謝感恩

@@bucklan是的,要保养。店员有教我防粘锅尽量用中火来煮,不要太大火尤其是锅底空空预热时。而且煮后热热不能洗,要等完全冷却再洗。洗是不能用钢丝/连海绵上青色的部分也不能哦,只能用黄色柔软部分哦

Don't suggest to replace with other flour, or else the texture n flavor will differ. Glutinous rice flour can be easily found at minimarket or baking ingredient shop ya
