Black Carrots with Yoghurt: 4 black carrots, coarsely grated 1 clove of garlic, peeled 2 tablespoon extra virgin olive oil 450 g room temperature savoury yoghurt 1 tablespoon mayonnaise (optional) 1 levelled teaspoon salt To garnish, Extra virgin olive oil Coriander leaves (or parsley) Walnuts, chopped Pistachio, chopped • To peel the carrots, place the blade of your paring knife at the top of the carrots and press down along the surface, scraping a thin layer of skin off the carrots. Just be careful not to peel too much of the meat off the carrots. A gentle scrape of the top will do. • Heat a medium frying pan over high heat and add the extra virgin olive oil. • Sauté the black carrots and garlic clove for 5 minutes and don’t stir at the first 2 minutes to brown the carrots. • Cook for another 3 minutes and add the salt while stirring occasionally. Don’t stir too much and mash the carrots. • Take out the garlic clove and mash. • Transfer the black carrots in a bowl and leave them to cool down slightly. • Whisk the yogurt, garlic puree, mayonnaise and a pinch of salt until smooth and creamy. • Mix the black carrots with the yogurt mixture and transfer to a dish. • Drizzle with some extra virgin olive oil and sprinkle some coriander leaves, walnuts and pistachios. Zucchini and Carrots with Dill and Yoghurt: 3 small zucchinis, coarsely grated 1 carrot, coarsely grated 1 clove of garlic, peeled 2 handfuls of walnuts (or peanuts or cashew would do great) 3 tablespoon extra virgin olive oil 500 gr room temperature savory yoghurt 1 tablespoon mayonnaise (optional) 7-8 sprigs of dill, chopped (fennel works very nice as well) 1 teaspoon salt To garnish, Dill leaves Red pepper flakes Extra virgin olive oil • To peel the carrot, place the blade of your paring knife at the top of the carrot and press down along the surface, scraping a thin layer of skin off the carrot. Just be careful not to peel too much of the meat off the carrot. A gentle scrape of the top will do. • Heat a large frying pan over high heat and crumble the walnuts in it. • Roast the walnuts for a couple of minutes and add the zucchinis, carrots, garlic cloves and olive oil. Don’t stir at the first 3 minutes to brown the vegetables. • Cook for another 6-7 minutes and add the salt while stirring occasionally. Don’t stir too much and mash the vegetables. • Take out the garlic clove and mash. • Transfer the vegetables and walnuts in a bowl and leave them to cool down slightly. • Whisk the yogurt, garlic puree, mayonnaise and salt until smooth and creamy. • Mix the vegetable with the yogurt mixture and transfer to a dish. • Drizzle with some extra virgin olive oil and sprinkle some dill leaves and red pepper flakes.

I made the celery root (celeriac) one a couple days ago and it turned out fantastic. I was looking for a light supper, so I whipped up a bowl of hummus, the celeriac meze, some pita bread, olive oil, za'atar, and some celery and carrot sticks, sat on the deck, music playing, and life was seriously good. Food like this makes me happy. :) Thanks for the recipes!

I made a special (socially distanced) trip to a Turkish grocery store today and bought the thickest yogurt I've ever eaten, and two kinds of bulgur - I only know about the different kinds from your videos, Refika! The one disappintment was not finding kudayif (?spelling) but my joy about the yogurt makes up for it :)

Great episode. There are similar mezze in Syrian and Lebanese kitchens such as Beets or pumpkin with Tahini. Zuccini with Yogurt, Cucumber with Yogurt and mint, Eggplants with Tahini.

Think the carrot one & then the celeriac, if you'd ask me to pick my favourites. 😋 Great to see you mention beetroot too, I'd mentioned previously that I thought it strange that you rarely see it in Turkish cooking. I love the sweet earthiness of it. My favourite for a long time has been Yotam Ottolenghi's pureed beets with yogurt & za’atar. Thanks to you & your team for all the delicious ideas.

A friend of a friend is Bosnian. Her name is Ankica, and she invited me in to her home and made coffee and fresh bread and served smoked meat, and it is a very happy memory. She even gave me a tour of the very large garden and smokehouse they had made from the children's playhouse after their children grew up!
