I love how far you stretched that meat and saved yourself time for your busy work days. I don't make lasagna very often because of how heavy it is and really too many carbs for us. Using just two layers of noodles makes so much more sense. Thanks, Bev.

You are amazing!! I have struggled for years to frost the top of cottage pie with mashed potatoes ~ Mess! You have taught this old dog a really neat new trick! Meals for two are just my size. Love the lasagna recipe too!

Bev, you’ve taught me sooo much about food prep and food security. I love you’re cooking and preserving videos. You take the fear out of getting creative with our food and saving money at thr same time. Our daughter just said she would love more of the chicken meatball freezer meals I made her a couple months ago. Just ground chicken and stuffing made into balls and cooked. I added green beans, mashed potatoes and chicken gravy. Cheap and easy. I love knowing she’s eating well. Thank you for Everything you do for us.

Hi Bev! Just a side note...you absolutely can do the freezer lasagna with gluten free noodles! The trick is that you have to cook the lasagnas first. Then cool then freeze! I make a very large (gluten free) lasagna for myself and my husband then cut into servings - 2 pieces each foil container- allow to cool and freeze. Then bake from frozen, covered, until heated through. Gluten free is a bit of a pain but it has helped with fibro flares and overall joint pain and stiffness. Thanks for all your good ideas!

I love doing this type of thing. Yesterday I bought $48.00 worth of lean ground beef on sale. I We turned it into 70 meatballs, 17 hamburger patties, 6 - 1 lb bags and 2 full meatloaves for a total of 26 meals for 2 hungry people who love to eat. That is less than $2.00 per meal. It can be done and you are right it is good home economics.

@@tericandeloro4082 Thank you for your comment. Yesterday our grocery store had pork loins on sale for $1.99 per lb. We bought 18 pounds and cut some into pork roast size and the rest into huge pork chops. We got 15 meals worth for $36.00 and that works out to $2.40 per meal for meat for 2 people. Lots of good eating for a very good price.

That is a truly economical use of delicious ingredients. Just as I was thinking why is Bev using parchment in her containers you answered my question. I have ground Italian sausage in my freezer I'm going to make lasagna with it one for dinner and one for the freezer. Thanks for the inspiration Bev Much love from Northwestern Ontario Canada.

I never tire of eating Shepherd's pie or Lasagna. Your island sure is helpful for making multiple meals!!! Thank you for your inspiration!!!

I make a dish a lot like that but with chilli seasoning (tamale pie ) my whole family loves it and it freezes beautifully. I always make extra to freeze. You could also throw in a can or two of beans and top with cheese and have taco pie . God bless !
