This is to remove any other substances they may have drawn into the syringe, and to force air out. Tapping it doesn't do anything except encourage loose bubbles to move up. The Soda can thing doesn't do anything, since it's still highly pressurised inside. They only thing that you can do is wait for it to succumb to the pressure and go back to a liquid form

Actually, with the egg, it can be done much faster and with much less of a mess. Yes, pound it against a counter on either end, top and bottom, but then roll the middle between your hands, and the shell will come off quickly, and usually in one piece.
