Great video, this one and shopping in Tesco, but I see huge gap - no green leaves like spinach or kale, and these should be eaten every day, especially when someone is on the budget and don't incorporate other nutritional food. Green leaves are soooo important.

I really appreciate that you always include even cheaper/more do-able options to even these recipes, like with the suggestion of just mashing the soup with a fork if anyone can't afford a blender. It's really thoughtful and inclusive and makes your videos and recipes, and veganism in general, way more accessible to a wide range of people from all abilities and financial situations!

I'm not vegetarian or vegan, but i have become more and more aware of wanting to cut down on the amount of animal products i use recently. I put it off for ages thinking it would be so much more effort. I stumbled on your videos a couple of weeks ago and they've inspired me to get more confident and creative with new things in the kitchen. Today i meal prepped for my husband and I to do us for the next week and two out of the three bulk meals I made were vegetarian/vegan. Side note: defintiley recommend doing a budget aldi shop! I spent around £28 for two of us today but that also included more luxury meal ideas like ready made falafel, one meat option which put the price up a bit and bought my husband a travel mug!

You’ve hit the nail on the head of why people don’t try veganism or including more vegan food in their life: they don’t know any vegan recipes! So they think they have to buy things like felafels and veggie patties which are not cheap. So glad you’re on your way to better health, better planet, and better finances! 😁

Ive found more recipes I can try but since I meal prep I try to just make one new thing a week incase it goes wrong! I'm aware of things I could do instead of falafel but I genuinely enjoy them in wraps. Did try making my own from scratch but it turned to mush 😂

The best stock I've ever had is homemade veggie stock. I use veggie scraps (onion and garlic skins and carrot peels and the occasional potato peel) boil for 30 minutes (add salt if you want). So easy and nearly free (made from stuff that would otherwise be trash).

I'm not vegan but we do eat a lot of veggie meals and have made swaps to alternative milks etc. Love these videos, everything always looks delicious. Perhaps a video on basic pantry provisions/things you would recommend people always have to hand would be useful for people who are starting uni/moving out/changing their diet.

You must hear this a lot, but... thank you ❤️ I’m not a vegan myself, but my husband and I have been trying to eat more plant-based the last few months to a year. I’ve been watching your videos for about 5 months and leave inspired to cook each time. You whip up combos that not only taste lovely, but are accessible, easy, and perfect for meal prep. Your aura is also so welcoming. I’d often go to other vegan channels and feel shamed for not being fully committed to veganism, be it through the holier-than-thou attitude from the KZbinr or from toxic people in the comments. I admire the way you speak about veganism and it’s benefits, how down-to-earth and approachable you are at the same time. Thank you for making veganism less daunting, expensive (not everything is just dates, dates, nuts, and more dates), and for making the transition seem less... scary and guilt-ridden. I couldn’t thank you enough.

Another way to eat this porridge combination is to put this mix into a baking dish instead of a pot in the oven for 30 min at 385 F. It comes out crispy and soft like bread pudding at the same time, baked oatmeal is divine (ratio liquids to rolled oats has to be equal).

I would personally add some greens: frozen spinach is a good solution to add to legumes. Frozen veggies are usually more convenient than the fresh ones and last longer. Thanks for the video 🌸

Peanut butter (or just peanuts) can be a cheap addition to a weekly shop. Really happy you're doing Aldi next, I love Aldi.

I LOVE that you're making this a series!! I'd personally like to see one week without any soy/tofu but focused on getting an ample amount of protein. My doctor recommended I not eat soy, but it's SUCH a major ingredient in most vegan/vegetarian diets. I find it very difficult to get enough protein in my diet. xx

Great video! Would absolutely love Aldi next since that one is all over Europe and the US as well. Your note at the end was super important. I always try to eat a lot of fresh vegetables but budget wise they do add up which is super annoying! For lent this year I've made it my goal to eat vegan for at least two of my main meals each day. Today all three of them were! Annoyingly the moths got to my noodles so I used spaghetti for my stir fry instead, but it tasted nice regardless!

Will definitely try the chilli, stir-fry, lentil Ragu & the lentil Dahl. Can't have the microwave noodles because I don't have a microwave. I love budget recipes but I haven't tried to live off £15 per week the minimum I have lived off has been £25.00 per week and that's been shopping through Tesco. Shopping at Lidl & Aldi would be great. Shopping at Iceland and Farmfoods too for frozen vegetables and fruits.

you can cook more pasta than you need beforehand, but don't mix it with the sauce when storing it. Mix it with some oil when storing it, so it does not clump. Extra tipp: you can elevate the pasta experience by frying the left over pasta in a pan to reheat it, so you get some crispy bits. I feel like vegan dishes can sometimes be a bit mushy, so I try to find all the tricks for extra crispiness or tenderness and chewiness.
