Very interesting, thankyou for posting. At first, i was like " o-kaaaay..." but as i watched, i thought about all the things i like; beer, cheese (especially any blue) wine, whisky, dried fruits, yoghurt, charcuterie...the list goes on. And these guys are accentuating those techniques...

woaw, their use of koji is really creative, its the first time I heard people use it to ferment meat when it usually ferments alcohol drinks. How does it change the flavour?
