I love how with all your recipes you include a good volume of food to eat. I see so many healthy recipes where they just plate up a tiny amount of food. I don’t care how healthy and satisfying the ingredients are. If there’s not a good volume of food, I won’t get full and will still be looking for something else to eat.

I'm totally with you. I like a volume of food, and love that if you pay attention to food density you can eat until you feel satisfied. That encourages me to keep eating this way.

For InstantPot pasta meals, I mix all the ingredients EXCEPT the tomatoes/tomato sauce in the pot, then pour the tomato over the top without mixing it in. It allows me to use less water but still avoid the dreaded 'burn warning' on the IP. 2-3 minutes on high pressure, quick release, seems to be plenty time to get red lentil pasta and the veg cooked as long as I'm chopping them pretty small. Absolutely love your straight-forward, 'no shame in being overwhelmed' attitude and approach to getting healthy food in our bodies. Cheers!

Please please do more of these pressure cooker recipes. I made the pasta one, changed it slightly and took 3mins to cook. Sooo easy. We now have a quick meal or snack for growing teens and my lunches.

It was really great to see you make khichdi.... using all the indian masalas(spices). It's a regular Sunday Comfort food in our house. There are many ways of making khichdi..... U can try just rice , yellow mung dal with some veggies(potatoes, carrots cauliflower etc) salt and turmeric powder...... later once it's pressure cooked add some frozen peas and some green coriander leaves...... If you feel like, later u can also use some tadka( tempering of cumin, mustard, garlic, curry leaves....sometimes interchange and use onions in the tempering ) and have it warm with pickles, vegan raita, and papad. Love and wishes from 🇮🇳

Hi Chelsea!!! I watch your youtube videos on my television so I haven't a way with the tv to comment to you So, here I am. I made your wonderful pasta dish last week and my hubby and I loved it. I mean we LOVED it. Then two days ago I made your corn chowder recipe and that is just as much of a hit as the pasta dish. So yummy! I had to run errands for a few hours this morning and I don't eat until 11am or noon every day. So when I arrived home I was really hungry and just took the pot of chowder out of the fridge and ate it cold and it was wonderful cold!!! Yum!!! You are so much fun. You're children are adorable...what a nice family you and your husband have. Good for you! God Bless you all!!! Lynda

I don’t think it’s an issue to use an occasional light spray of oil. It’s not a lot of calories, and I don’t see how that small of an amount would be a problem. I know the WFPB community promotes no-oil, but I think we also need to have perspective. A tiny spray here and there isn’t a big deal.

Could you please provide a link to copies of your recipes that do not depend upon having an Instagram or Facebook account? I don’t use either and that was the only way to get your Kitchadi recipe. I had a bowl of the most wonderful Kitchadi in a tiny restaurant near San Jose, California, and the recipes that I have tried don’t come close to being as good. In fact, I have thrown them out.
