麵包6個
1杯=200ml
麵團:
102克✖️6個
高筋麵粉360克(3杯)
水215克(1杯+1大勺)
白糖15克(1大勺)
酵母5克(1+1/4小勺)
鹽6克(1小勺)
無鹽黃油25克(5小勺)
煮貝果的水:
烘焙用小蘇打35克(2大勺)
水1000克(5杯)
表面:
白芝麻
烤箱預熱15分鐘
200°C
烘烤20分鐘
出爐前2分鐘、和出爐後表面噴糖水
Recipe :
Bread ✖️6
1cup=200ml
Dough:
102g✖️6
Bread Flour 360g(3cup)
Water 215g(1cup+1 tbsp)
Sugar 15g(1 tbsp)
Instant Yeast 5g(1+1/4 tsp)
Salt 6g(1 tsp)
Unsalted butter 25g(5 tsp)
Water for cooking bagels:
Baking soda 35g(2 tbsp)
Water 1000g(5 cup)
Surface :
White sesame
Preheat the oven for 15 minutes
200°C
Bake for 20 minutes
Spray sugar water on the surface 2 minutes before and after taking it out of the oven

感谢您的喜爱!面包出炉后刷(或者喷)糖水的调配比例一般是糖1~1.3:水1😘💞

Ali I love all your bread recipes I live in SF Ca I have been trying all the bread recipe s is amazing it smells so good in my kitchen after the breads are done or while baking the recipes are so easy to follow it’s a success I bake and contribute to all my relatives and pass on the recipes to them they love it thanks score sharing the recipes and I encourage them to bake but Read at home and they stopped buying from the bakerery 😅

煮水是为了让面包表面遇碱性水帮助上色,也让表面淀粉糊化,烘烤后形成酥脆有韧性的外壳。
