4 Ingredient Tamarind Chutney (Sour, spicy, and sweet!)

Tamarind chutney is one of my favourite accompaniments for samosas, chaat and North Indian meals. It's flavour is incredibly addictive with sour, spicy, and sweet notes.
The great thing about this recipe is that it takes only 15 minutes and 4 ingredients! The outcome is a glossy bold sauce that will rival your local Indian restaurant :D
INGREDIENTS
¼ cup tamarind
1 ½ cups boiling water
1 cup jaggery (finely chopped or powdered)
2 tsp tsp ground cumin
½ tsp kashmiri chili powder
Salt to taste
METHOD
Add tamarind to a bowl and top with ½ cup of boiling water. Soak for 20 minutes. Then transfer to a blender and blend until smooth. Add remaining water and blend again. Strain mixture through a sieve, discarding any pulp/fibers left in the sieve.
Transfer strained tamarind juice to a small saucepan and add jaggery, cumin, kashmiri chili powder, and salt to taste.
Bring to a simmer and cook for 10-12 minutes or until the chutney takes on a deep colour, and slightly thickens. Transfer to a container, and allow to completely cool.
Serve with your favourite chaat dishes. Enjoy!

I would always ask for extra of this chutney when I go to my regular Indian takeout. The owner calls me the chutney girl and gives me extra. The other day, I asked him if he can make me a tray of mini samosas for a road-trip. I’m picking it up tomorrow and as usual, he said that he’ll give me extra tamarind chutney. My dad loves the green chutney though. 😅

That's actually 5 ingredients Tamarind, palm sugar, cumin, paprika, salt. 6 ingredients if you also count water.

@@usharanisridharan3885 I know you are being sarcastic, but you do make a point. The reason I bring up salt and not water is because salt is typically listed as an ingredient that you have in finite amounts at home, and is typically listed by most recipes, but water comes as easily as turning on the tap. However, if you are preparing this dipping in an area where tap water is not drinkable, whether due to biological or chemical contamination, you may need to prepare bottled water for cooking, which come comes in finite amounts. I have edited my list to better server people in developing countries with drinking water shortage who are viewing this video.
