Today, I'm delighted to share with you a compilation of my easiest and quickest shito all under 30 minutes. I hope you enjoy it.
Emergency No Fry Shito
**Ingredients**
2 medium Onions
1 bulbs Garlic
1 big thumb Ginger
1 cups Shrimp powder
1 cup Sichuan Chilli Flakes
5 spring onions
1 fresh rosemary
1 litre Oil
**Dry Spices**
2tsp ground Calabash Nutmeg
1 tsp1 tbsp Cloves
1 tsp ground Black pepper corns
1 tsp ground Aniseed
1 tsp salt
2-3 bay leaves
Low Fat/Cholesterol Shito
**Ingredients**
6 Medium sized Onions
1 Large Ginger (to get about 15-20 slices)
1 Bulb Garlic
1/2 tbsp Tomato paste/puree
2 tbsp Chilli powder (depending on your heat tolerance)
1/2 tbsp Ground Cloves
1/2 tbsp Ground Black pepper
1/2 tsp Ground Star Anise
1/2 tbsp Ground Aniseed
1/2 tbsp Ground Calabash nutmeg
1 Cup Fish powder (herrings)
350ml Extra Virgin Olive Oil
Salt tt
Kenkey Shito
**Ingredients**
Herrings
Dry Chilli Flakes
Ginger
Red Onion
Calabash Nutmeg
Aniseed
Cloves
Salt tt
Oil to fry
The New Shito Recipe under 30 Minutes
**Ingredients**
10 medium Onions
10-15 pieces Dry Chillies
2 bulbs Garlic
4-5 cups sliced Ginger
4-5 cups Shrimps
1 twig fresh rosemary
1/2 cup Tomato puree/paste
1 cup Sichuan Chilli Flakes
1/2 cup fish powder
1 litre Oil
**Dry Spices**
8-10Calabash Nutmeg
1 tbsp Cloves
1 tbsp Black paper corns
1 tbsp Aniseed
1/2 tbsp Ashanti Pepper
1/2 tbsp Grains of paradise
3-5 Star Anise
One Pot Zongo Shito
**Ingredients**
20 Smoked King Prawns/Shrimps
2 Cup Ground Smoked Herrings
15-20 Red Dry Chilli (Ladies fingers)
2 tbsp Tomato Puree
100-150g Ginger
6-8 Large Cloves Garlic
10-15 medium size Red Onion
6-8 Calabash Nutmeg (Wideaba)
1 tbsp Aniseed
1 tbsp Rosemary
1 tsp Thyme
1 tsp Esuro Wisa (African Black Pepper)
1 tsp Efam Wisa (Aligator pepper or grains of paradise)
1 tbsp Whole Cloves (Pepr3)
1 tbsp Whole Black pepper
Salt tt
Oil to fry
