Mangalore cucumber chutney was an interesting choice and new for me. Thank you for the recipes. My mom used to make ridge gourd chutney after the ingredients are ground into a thick paste she used to bring them to a boil it used to be very spicy and delicious and lasts over a week without refrigeration but needs to boiled once a day.
