One week later, after the West African Peanut Stew was a win, I just made the Indian Split Pea (with a bag of mixed beans because it's all I had). ANOTHER WINNER! I make A LOT of soups so my family KNOWS good soup when they taste it. Both of these are SO big on flavor, nutrient density and easy on the home cook! THANK YOU! Keep 'em comin'. Mmm, soup! I believe stews include meats, the long stewing time was needed to break down the collagen, which tenderizes the meat. A stew hen was a tough old bird that wouldn't cook well in a faster style of cooking. And if you stew on something, you are usually thinking over something for a long time. Cookbook- preordered and i am looking forward to it! Congratulations on doing it YOUR WAY!

Have tried sunflower seeds a couple of times as a sub for cashews and it's a no go for me - too much sunflower taste. I have found that white beans are the best sub for cashews and I often use them interchangeably, or half&half, for instance in "cheese" sauces. All of these soups sound delicious and perfect for the season we are in.

Though super expensive compared to sunflower seeds, pine nuts are usually safe for nut free needy people, and are pretty high in fat content like a cashew, but the flavour of cashews is so good. I usually do a mix of pumpkin, sunflower, and pine nuts to sub for cashew. I wish we did not have nut allergy in the home, because I LOVE cashews. Oh yeah, I recently started using soft silken tofu for any creams and sauces. It works pretty well. 2 things I can't abide are big pieces of greens - they must be chopped tiny, and globby tomatoes -they must be blended into absolute smoothness (blame my family for feeding me canned stewed tomatoes; possibly the grossest thin besides animal parts in a can. My tomato soup recipe starts from Laura Miller of Raw. Vegan. Not gross. The recipes are not all raw, obviously, by this soup recipe... She cuts up the tomatoes and just throws them in an oven pan with all the herbs, lotso thyme, basil, salt pepper a wee bit of maple syrup (that may be a la Buddhist chef) seasoning including a dash of cayenne, and the cloves of garlic, roasts them I don't know about 20 minutes I forget. Then blends everything super smooth. So Yummy. I do similar with potatoes. Though I use a different set of spices.
