Set a budget for yourself and look for a good knife store and go shopping. German or Japanese steel is a personal choice

Look at chubo knives or korin knives. They’re pretty good for beginners, apparently.

If nobody has told/shown you, it's best for your knives to not store them in a block, most designs are bad for the edges of the knives.

I agree and have been interested in what knives are best and which ones to use for certain things. I also have a basic colorful Faberware set and just got some Japanese knives off Amazon which are ridiculously sharp lol

I've used caramelized onions in ramen before to give it some sweetness and it turned out amazing. Also i wholly recommend using pancetta in your broth it adds a ton of flavor

Hey, your carrot soup inspired me to make something similar - I made pretty much the same thing, except I added some bell pepper I had lying around added with the carrots, as well as coconut milk instead of the cream. It turned out absolutely amazing, it's a great fricking recipe that 👍

Your recipe looks very rich and savory. I've seen other videos where the onions are caramelized but once cooked with broth, they look like worms lol. I love the broth getting thickened and I definitely will try this version.

I think the amount of butter in your recipe description is wrong. I looks like you threw in 2 sticks of butter halved, not 4. And it also looks like a lot more than 4 quarts of onions. I used this recipe the other day and my onions were swimming in butter.
