A stunning, truly high-end take on the classic flavour combination of beef and onion, this dish from Adam Handling looks beautiful on the plate, but there’s plenty of work needed to get it tasting even better. The key here is forward planning - the tongue, sauce, puree and ox cheek can all be prepared days in advance to be reheated before serving, leaving you to simply cook the onions, sear the steaks and assemble the dish on the day itself.

Watched a few of these series now and this is hands down not only the dish I would like to eat the most but shows the most culinary technique! Great work and I hope to be in Covent Garden soon to try it myself

Beautiful technique. Otoh, it's not blood (it's myoglobin) that releases... and searing doesn't keep it inside the meat. We've learned this only somewhat recently or at least since I started cooking or even later after I left school (1996.) I was taught the same by some very experienced European chef talent so not here to criticize whatsoever. Science of cooking evolves after all. We can learn more in the latest update of "On Food and Cooking" - Harold McGee. I say latest version because earlier releases would confirm what the chef has said nonetheless. I mean only to compliment here and to share what I've learned as I consider it a duty of chefs to share everything we've learned. Take my words however you like, friends...you certainly aren't obligated to believe or trust my suggestions. Finally, again, excellent technique and one of my favorite saved videos from this entire series is the Halibut, mussels, lettuce, potatoes from this very chef here. Best of luck to you all and hang in there even as this ridiculous "pandemic" attempted to crush our industry and all of the jobs it created and allowed. Keep working hard to be the best.
