One important thing wasn't mentioned. At these high-end "kappou" (counter) restaurants, part of the experience is talking to the chef and staff. It's great that Shimura-san speaks English. I went to one in Kyoto and the chef/staff spoke with everyone except me. They tried, but it's just a totally different experience if you can speak Japanese. From what I understood and observed, out of 11 seats, there was one pair was having a business meeting, one pair of friends eating there for the first time, two pairs of "regulars", the chef's daughter and husband/boss/sugardaddy, and myself. The six people were having the time of their life with the chef and staff. The other two pairs were left alone, but I think they wanted to be left alone. They tried to include me into the conversation, but we couldn't get past the common pleasantries. It was still fun. For me, it was like watching a restaurant scene from J-drama.

I love really good tempura. All too often in the west though, it's in a thick, heavy batter that isn't really tempura at all. I've had mediocre tempura in Tokyo too, but the baseline is definitely higher. I'd love to visit one of the Michelin-starred ones, though it's hard to work out whether they can offer a vegetarian meal, even accepting that the tentsuyu may have bonito in the dashi.

If I cook a french omelette at home from supermarket eggs, it's just an omelet. If a chef with decades of experience cooks and seasons it to perfection, using eggs from a specific type of chicken and from a specific farm, and then serves it in a good atmosphere together with the right drink pairing, then it's high end. In the end it's still just eggs, butter and seasoning, but the taste, the consistency and the experience are all gonna be very different from what the average person can make at home. Whether it's worth the extra money or not is for you to decide, but they're no doubt two very different things.
