Mix all the ingredients in part ① and let it fermentation for 20 minutes 2. Mix all the ingredients of ① and ② and let stand for 20 minutes 3. For the first time, stretch and fold the dough in two circles and let it rest for 20 minutes 4. Add dried fruit, stretch and fold the dough for the second time and then start fermentation. Fermentation time: reference room temperature 30°C, reference time 1 hour. 5. Divide the dough into two dough, shape the small dough,let it rest for 20 minutes. 6. Shape the dough again and ferment it for the second time. Reference time 1 hour. 7. (Preheat the oven 20 minutes in advance) Sprinkle flour, cut the surface of the bread, bake, and spray water when entering the oven.

Thanks for sharing this crusty fruity & nutting buns demo. I noticed you did not put a bowl of water but instead you sprayed water ontop of the dough before baking

hi Ali, can i ask 2 questions 1. i use japanese bread flour, but somehow everytime my bread after taking out from proof basket and bake, the bread come out always very flat and does not rise, not sure what is the problem 2. if i am using the function steam bake (fotile one oven), do i still need to spray water on the bread before putting into oven?
Hi Ali, my oven has 4 rack. Is it baking at the lowest rack?

Hi, it’s suggested to bake at 3rd rack (count from top to bottom) IF the thickness of your baking tray is normal and the your bottom heat power is strong enough. 💖💖🌹🌹 I put on the bottom rack is because my baking tray is kind of thick and my bottom heat is kind weak. 🥰🥰🥰❤️❤️❤️

Can I use sourdough starter in place of instant yeast? If so, how much sourdough starter is needed? Thank you

Hi, yes I do think you can use sourdough starter, it’s a good idea because it will make the bread more chewy.👍👍 However, I can’t give you a definite amount of sourdough because I never used sourdough in this bread myself. Usually, the amount of the sourdough shouldn’t exceed 1/3 of the amount of flour❤️❤️🥰🥰🥰
