Truly my two favourite food people in one place. I am so blessed. A Thanksgiving miracle of sorts.

PERFECT answer to the multiple dietary restriction Thanksgiving. My mom and I have been vegetarians for decades, my mom and brother have moderate to severe gluten allergies, and my dad is just game for anything. There is a turkey. Gravy is GF. Sauces for casseroles are vegetarian and GF (seriously can't tell the difference between cream of mushroom made with flour vs corn starch??), and lots of veggie sides. The one thing we get complicated on is the stuffing. My dad makes 2 bases...one with GF bread and one with regular bread. I get a few cups, my mom gets a few cups, etc. We are all responsible for finishing our stuffing. It works.

I forgot about the desserts. My mom is an immaculate GF baker, plus we've been mixing it up for the last 20ish years. Honestly don't miss "normal" Thanksgiving desserts. I think we're doing an apple cheesecake this year....

Um, I do what Samin Nostrat suggested and I get crispy skin on the turkey ever since. Leave it uncovered in the fridge the night before. The skin dehydrates and that gives you a skin that practically crunches. Even, yes, through basting. Been doing it 3 years now so it worksl

I've been doing Nigella's wet brine turkey with maple glaze for YEARS and it's always top tier... perfectly moist inside, golden brown outside... i just put it in plastic brining bag and put that in a washing bowl and (climate allowing) stick it outside for a few days (in a car trunk if its cold enough!).... saves space in the refrigerator too!

I think we all eventually reach a time when we get tired of getting everything ready for Thanksgiving. I know that I did. I used to prepare everything and finally I started asking everyone to make different dishes and that worked so much better. I was no longer stressed and could enjoy it more.

Yes!! Excited for this. 6 minutes in and love that you have already talked about my biggest gripe - the obsession with crispy skin for a turkey when it really doesn't add anything to the actual eating experience. Love you guys =D

The last time I wet brined a turkey was 14 years ago when I was 8.5 months pregnant. What a beast of a chore it was dealing with that big wet bird. We had to dry it with a hair dryer - before deep frying. NEVER AGAIN.

Great pairing! For the guy in Mexico City doing a small meal that’s special, I always like to do individual beef Wellingtons for small groups on the holidays or something like scallops ceviche so that there aren’t a lot of leftovers but still feels special.
