Can I prepare the batter the day before and bake them the next day when they are actually needed? Or should I bake them kinda halfway through the day before and finish them baking right before serving? Alternatively, what's the best way to store them over night to keep them as fresh as possible?

Sadly, no. This is a make it then bake it immediately situation. The good news is that you can wrap the baked ones very well and then freeze them! Then thaw and reheat to serve.
