Here is the recipe Poke Bowl Inspired by Bryan Landry FOR THE SPICY AIOLI: 1/3 cup mayo 1/3 cup sour cream 1-2 tsp Sriracha Salt and pepper to taste FOR THE SESAME VINAIGRETTE: 2 T. soy sauce 2 T. rice vinegar 2 T. olive oil ½ tsp. toasted sesame oil 1 T. honey 1 T. freshly squeezed lime juice FOR THE BOWLS: half of a medium English cucumber, cut into ¼ slices 1/4 c. pickled ginger slices 1 medium avocado, sliced 12 oz. sushi grade salmon or tuna, cut into 1/2" cubes 1/2 c. frech fried onions 1 tsp. black and/or white sesame seeds lightly toasted 2 green onions, thinly sliced 2 c. cooked white sushi rice or brown rice ¼ Cleveland Kitchen pickled Asian vegetables INSTRUCTIONS For the spicy aioli: Whisk together mayonnaise, sour cream and Sriracha. Refrigerate in a covered container until ready to serve. For the sesame vinaigrette: Place soy sauce, rice vinegar, olive oil, sesame oil, honey, and lime juice in a container with a tight-fitting lid. I like to use a mason jar with these lids. With lid on, shake vigorously to combine. Place in refrigerator until ready to serve. Shake vigorously before using. To assemble the bowls: Divide and layer in the warm rice, followed by cucumber, pickled vegetables, pickled ginger, avocado, tuna, fried onion, sesame seeds, and green onion. Top with sesame vinaigrette and spicy aioli.

Same for The Point on Hatteras Island, NC. Some of the folks at The Point can be real jerks if a blitz pops up or the red drum are in close and feeding. I've seen people almost get into fights because someone next to them casted close to them or crossed their line. It can be crazy!@chrismack5908

I have smoked bonito . It came out really good I soaked it in almond milk for 4 to 6 hours, then I put it in my fish brine over night Smoked w/ apple wood chips @ 215 degrees about 2 hours I used most of it for dip Keep up the GREAT Work 😇🙏🏻🕊️

It was great, one day I’ll go to Navarre pier. Just not a big fan of lot of people there. I’ve been under the weather for a while, & working, usually I go fishing at 5:00 am on my days off, but haven’t been feeling well and working a lot. Weather have been bad too. Hey mate, love your vids, I have worked on the tuna farms years ago here in South Australia, the best way to bleed a tuna is to poke your knife down through the flesh on the lateral line just behind the pectoral fins! They have their main artery flow through there, bleeds them out real quick and gets the most blood out of any methods! Makes even those Bonito ( we call the Mack Tuna ) the best very blood free in the flesh! Thanks for your efforts and hard work on all of your vids legend man! 🤙🏽🤙🏽

Brandt, I grew up in Southern California and we would catch a lot of bonito on the piers. They actually are good to eat. You must cut out the red meat on the sides. It’s very fishy tasting. You’ll end up with some whiter meat strips. Fried up they are good! They are real fighters.

West Coast we call em Bonita. Never heard them called anything but that in my 50+ years. Used to catch em on the boats here and I'd bring them back to my Filipino neighbor. She'd filet them and then smoke them for me. Never bled them prior or removed the bloodline and they were fantastic. You should do a blind taste test with some people on some fish that were bled and some that were not and see if there really is a significant taste difference.

In my experience, everything tastes better if cooked con fit (i.e. braised in duck fat.) IF you don't happen to have duck fat in your cupboard, try sous vide (i.e. vacuum sealed and cooked in a constant temperature water bath.) I've made Jack crevalles taste good with these two methods.

I've never eaten fresh Bonito. But l have used the dried Bonito flakes to make Japanese Dashi broth. I wonder if it's the same fish? They may call some other kind of fish Bonito for all l know...
