There is nothing like hot chocolate to warm a heart but seeing both of you make it your way, with your ingredients, over the fire, with the view of the lake in the autumn and the thrill of another beautiful Norwegian sweater in the making...all this made it even more special. Thank you for sharing such an important ritual with us.

The old Dutch recipe for 'warme chocolademelk' is different. While the milk is on the fire until it starts boiling we mix in a cup the desired amounts of cocoa powder and sugar with a little bit of water (or cold milk) untill it's creamy, without any dry lumps. Then when the milk has come to a boil we add the diluted cocoa, mix well and put off the fire. Piping hot it is poured into cups or mugs (we did that with a ladle). The 'de luxe' version than gets whipped cream on top of it.

Oh , hot chocolate. That brings back one of my earliest memories. My granddad, who sadly passed away when I was seven, took me up out of my crib in the early morning to take me downstairs. My mom and grandmother could therefor sleep a bit longer. There downstairs he would make us a bowl of hot chocolate each. One tablespoon of chocolate powder and two tablepoons of sugar in the bowl. He stirred it slowly with the hot milk. And we ate !! it with biscuits soaking in there. It was our little secret he said. We did enjoy it so much together. And I do think they did not know about it. I think I was about two years old then and it is one of my best memories about him

I use coconut sugar, it has a malty caramelly flavour. And I like to make hot chocolate in a pan too, but I use a flexible silicone spatula to smush the powder with a small amount of milk first and then gradually add milk. It is fussy but it means there’s no lumps. I like the process.

Hot Chocolate • 2 tablespoons cocoa • 2 tablespoons sugar • Pinch salt • ¼ cup water • 1½ cup milk • ¼ teaspoon vanilla Add water, cocoa, sugar, and salt into a microwave safe bowl and heat for approximately 40 seconds or until warm. Mix well to create the chocolate syrup. Add milk and vanilla and stir well. Heat in the microwave for about 60 seconds or until hot. or as I don't have a microwave I do it all on the stove.

I definitely agree with the hot chocolate from a thermos after skiing. Yum! I always make mine with some shaved bittersweet chocolate in addition to the cocoa, plus a bit of vanilla and a pinch of cinnamon. If it's really cold, I'll add a pinch of cayenne--warms you up quick! I am one of the people who gets a really bitter aftertaste from stevia, so I stick with regular sugar. I don't use any sugar if I have marshmallows though because they add plenty of sweetness.
