About Pai:
Pailin “Pai” Chongchitnant is the author of the Hot Thai Kitchen cookbook, co-host of a Canadian TV series One World Kitchen on Gusto TV, and creator and host of the KZbin channel Pailin's Kitchen.
Pai was born and raised in southern Thailand where she spent much of her "playtime" in the kitchen. She traveled to Canada to study Nutritional Sciences at the University of British Columbia, and was later trained as a chef at Le Cordon Bleu culinary school in San Francisco.
After working in both Western and Thai professional kitchens, she decided that her passion really lies in educating and empowering others to cook at home via KZbin videos, her cookbook, and cooking classes. She currently lives in Vancouver, and goes to Thailand every year to visit her family. Visit her at hot-thai-kitchen.com

HAhahah!!! Same same!! My boyfriend told me that's one of the most known expressions used with tourists in Thaïland. I haven't been there (yet!) but I still found it funny to remember.

I love Thai-food. It's all I eat and all my mother ever made. The explosion of spices in Thai dishes is a one of a kind. Every time I go home to Bangkok I am in food heaven

Pailin I love your videos and you are an excellent presenter! I have made a few of your recipes and yesterday made the 3 layered agar agar jelly..lychees, mango and coconut milk which tasted so refreshing and delicious however the layers slide apart all the time which made it frustrating to serve up as it didn't keep it layered look. I ended up carefully cutting it into 1 inch squares then poking a toothpick into each square and sliding the squares onto the plates...I poured the layers as soon as the surface of the underneath layer was set but they still separated...is there a way to make them stay together?

You're a beautiful young lady...inside and out. I started watching your video's a couple months back and I must say I've learned SO much. You're an excellent teacher. I had plans to make your Pad See Ew for Christmas dinner but it didn't pan out. I live in a small town and had no access to the different soy sauces. BUT! I just found I can order them from Amazon :) I WILL make this in honor of you. Thank you for all you do for us. God bless you everyday. :) xoxoxoxo

Yes for kafir lime! My wife uses it in semi farang - fusion dishes. Turkey meatloaf with grated green apple and kafir lime, for example.

Two things are common between you and me. I LOVEEE smaller versions of regular things - i.e. toy tea sets, toy kitchen sets, kittens and puppies and so on. I miss my parents who are not living with me here in US. I just love watching your cooking videos as you explain so nicely how to use what and not. Best of luck.

Just purchased your book....and started watching videos... the book is AMAZING!!! if you 'all do not have the book,,, it is a MUST BUY ITEM :) Not only is it a recipe book... but has many pages of technique at the beginning .... the is a REAL cooking book! :)

I enjoy watching you and your recipes. My question: I have been looking for a recipe for a chicken Thai soup that has pineapple. I tried it at a Chinese buffet restaurant and have not been able to find one that comes close. I looked up Tom kha gai soup recipe but it didn't include coconut milk/cream. Please help! TIA

Licorice was intended in the early days as a stomach remedy and it still works but it was never meant to be a candy and if you eat too much you can spend too much time in the smallest room of your house!

Have you got a Thai-version of falafel that doesn't involve chick peas or fava beans because I don't digest them well, but I love Thai food and I spent several months there.l Loved the food and the people and thought this might be a good idea. Also like your vids much. Thank you for it all.

I am American and I am a trained classical chef and lived in Thailand but I learned more about cooking Thai food from Pai more than anybody else. Thai food is so horrible in the US and I wanted to eat the Thai food I ate in Thailand. I have been able to replicate all my favorite foods because of Pai. I am so grateful. I'm glad she never compromised the authenticity of Thai cuisine for her audience like so many Thais do because they think they know what foreigners want.

Life is funny . I been to Thailand and just love the food . And I keep trying to cook Thai food like I have tasted there . But nothings ever works out so I am happy to come across your site . When cooking, can you tell us vegetarian options to certain ingredients? My mother always made her Thai food with meat when she was alive, and I loved it SO MUCH, but I am a vegetarian now, so sometimes I miss my favorite meals. Thanks!!!

I just found this from 2 years ago...you are just too adorable! I've learned so much from you. But I have to tell you that I was put off Thai food years ago from my first experience with it. All these years, I thought I didn't like lemon grass because I got a dish that actually turned my stomach. When I asked the waiter what that strong flavor was, he said it was lemon grass. Fast forward 25 years, and I have a client who is Thai, and a fellow foodie. We exchange food gifts every time she comes in, and one time she brought me a baggie of green leaves. The minute I opened the bag, there was the smell I remembered from 25 years before. ACK! They were kaffir lime leaves, fresh off the tree! I've since learned to love many Thai dishes, but I'm a big NO! when it comes to those leaves. Sorry to hear they're your favorite. :'(

Licorice, would be one of my favorite candies. When I grew-up in the 50's, there was a gum called Beemans Chewing Gum. It is hard to find here in So Cal. Love Black Licorice. Just saying. Some Farangs' don't care for the smell or taste of fish sauce ether.

The liquorice candy (sweets in England) that originated from the USA is garbage as it is not the real thing only flavouring, like so many other things that are flavoured such as fruit, chocolate, etc. Real liquorice is a very different taste. Also, real liquorice sticks, from the plant, are good to chew and swallow the juice if constipated.

I've seen they make PANAG so easily at the restaurant. How do you make it? I love PANANG. I used to eat Kav Khai at a Buriram market when I stayed there in the early 1981. Do you like Kav Khai?

Do you have any plant based recipes? (No meat, dairy, or oils?) If not, may I suggest you continue your journey of discovery and create healthy Thai foods so that health conscious folks can enjoy Thai? Others, with less cooking skill modify Thai recipes and they are usually pretty good. I bet you could create the ultimate healthy Thai dishes. Please try a few.

Why does it seem that only the Thai people take full advantage of rice noodles. They are so wonderful but I see very little in other cuisines of Asia.

good thought...but maybe you just havent done research, noodles are a staple to many, many...MANY...MANY Asian cultures/countries...so by me saying many so many times, i basically meant, ALL OF ASIA has multiple noodles dishes. you probably just heard of the few world popular ones. actually, Thai noodles doesnt rank very high compared to like, Vietnam, Japan and China. I hope this information helps, my friend. try some Vietnamese Pho, at a "Vietnamese" restaurant, not a thai/lao/hmong restaurant. Try REAL japanese ramen.
