The only thing that may ruin mine is the ginger i got... i couldnt find young ginger, plus its winter right now but i love how beautiful and simple gari is! Also your video was so pleasing to watch so thank you so much!!

Hi, I'd like to know if there is a especial kind of ginger to make the pickle, because the one i have is too fiber and hard to slice

I use young ginger which has not fiber much. I think gingers that you can get in your country are stored and dried for a few months already. We also have the kind too. You might be able to find young ginger in a specific season of the year. Hope you can find it!!

What is Kombu stock and where do I find it?

Kombu stock is just mixture of kombu seaweed and water. I think you can find dried kombu (kelp) online or at an asian super market.
