I know this will sound weird but hear me out: plus it up with a slice of lemon. Take the rind off and the seeds out, leave just the edible pulp. One small slice will do and I think it'll bring this sandwich to the next level.

I've never heard of "dried cured olives" before. And I've never heard of making asparagus puree or spread. So, this is quite an unusual sandwich to me!

It didn't sound like it would work at first, but it ended up working. But come to think of it, there is a salad here that is basically blanched asparagus with mayo or salad cream, and maybe sliced eggs on the side. And it's not so bad. I think I'd try it out.

Gotta blanch the spare guys, and add some mild-medium chili flake, like allepo or gochugaru to that mayo mixture, maybe a little salt and some citrus juice, switch out the lettuce to a nice big mild herb...perilla/shiso maybe? Now THAT sounds like a tasty tea treat to me.

WWI happening in Europe, with no food processor available or mayo. Certainly cooked/steamed homegrown asparagus and homemade mayo and bread. This sandwich would taste different in every household. I would tell you to make from scratch the bread and mayo with asparagus from a farmers market.

Love asparagus sandwiches. I use Labneh ( drained plain yogurt) and a little mayo with tinned asparagus - blended- and use it as a spread. So good.

It's a beautiful day in that cook-book's neighborhood but I think it would be even moreso with a bit of lemon zest mixed into the puree and perhaps some finely shredded carrot to add a bit of stability.

I’d add bacon, definitely smell a pork product of some type. But if meatless: I’d go caramelized onions and/or roasted garlic. Hit it with fresh ground pep and grated parm. (Parm and pep on both)

Great Video Thx for it , I would make that anyday except i'm poor so would keep it down to asparagus an butter , um would look at an olive but probably save it for another day when feeling rich an had a slice of bread to add for a full meal 🙂

Was canned asparagus available in 1914? I'm guessing it was? Considering how briefly fresh asparagus would have been available. Canned or not, an asparagus sandwich should be plussed up.
