Some might scoff at such a concoction. But many years ago, in a state of, ahem, advanced refreshment, in Brighton? I happened upon Grubs, and ordered their Tropical Burger. Beef Patty, Pineapple, Peanut Butter, Banana and Lettuce. And it was truly amazing. Yes I went back on further occasions, before entering Advanced Refreshment to check. Still amazing.

Needs jerked chicken and the pineapple should be cooked separately so you can get some good caramelization going. A better quality cheese will help out too. And maybe some scotch bonnet hot sauce.

Nope with chicken. That sandwich with (nice deli) ham instead of chicken and a burger sauce (mayo + ketchup + mustard + paprika + black pepper). Then wrap the thing in tinfoil and chuck it in the oven for ten minutes or so, until the pineapple is nicely heated and the cheese has melted. Then serve with fries that have an ungodly covering of allspice. (This being one from my history, when I lived in Iceland. One of Mrs G’s favourites!)

For the recipe remix you should use fresh pineapple and make a "pineapple salsa" with diced bell pepper, cilantro, jalapeno, tomato, red onion, lime juice, and salt. Maybe browning or seasoning the chicken would be good too (I'd go with red chili powder or maaaaybe tajin).

I think this could be improved very simply by switching the chicken with ham since ham as a stronger flavour and it's saltiness would work well with the sweetness of the pineapple. And of course using real cheddar would be much better. I also think I would toast the hamburger bun before buttering it and using it in the sandwich because it seemed pretty soggy. My father-in-law would make roasted ham with pineapple pretty often when he would invite me over for dinner, and he used to put clove on the pineapple, which was pretty tasty. I don't know if clove would work with the cheddar in this sandwich, though. Might be fun to try it.

Grated processed cheese seems to be in many old recipes but is not too popular now: you have to chop up processed cheese yourself. Probably it’s available to a limited degree ready-made. I’m not sure because I would never seek it out!

Growing up we would sometimes have pineapple sandwiches. My mom and maternal grandmother would each make them, occasionally. Spread mayonnaise on two slices of white bread - as much or as little mayo as you want (I go a little heavy). Add one slice of cheese (my mom and grandmother used American cheese but over the years I have come to not like American cheese much - I prefer sliced, medium cheddar). Then two slices of canned pineapple, drained as well as you can without making it dry so the juice doesn't make the bread fall apart. Close the sandwich and enjoy. I sometimes crave these sandwiches, especially when I am hungry but not extremely hungry and just want a 'little something'. The creaminess of the mayo with the sweet zing of the pineapple with the two balanced by the cheese and the bread as a background flavor. Delicious! I will say that some brands of pineapple work a LOT better than others. Some brands - even well known ones - aren't flavorful enough to do the sandwich justice. You'll have to decide what is your favorite. Also, I prefer the pineapple to be cold from the refrigerator.

Bacon seems a mercy. CHICKEN? I thought the Mutt to pineapple's Jeff was always ham? As in, you want that sweet to be paired with a flavor-forward meat. That's why filet mignon rarely gets topped with any tropical fruit! Personally, I love a pineapple in a savory dish. (If you are anti-pineapple on pizza, try it with jalapenos and feta cheese. It ain't authentic but it ain't not good either!) The otherwise "meh" burger chain, Island's pluses up their "meh" burgers with pineapple and I like a slice of Swiss on it. Even as I non-meat person, I'd say go for some nice Canadian bacon on the remix and a layer of BBQ kettle chips! I'd slap that betwixt potato rolls.

As one of the only two Eiland-Halls in the universe, I am insulted by this Island Sandwich. What a boring sandwich. Well, not boring in tht they wanted to start a fire in your toaster oven! And I am absolutely shocked at bacon as the plus-up here. It needed some sort of sauce. Some sort of.... I dunno... flavor. That said, chicken and pineapple? Sure. With some sort of cheese? Alright. But as much as I often think that for me, the plus-up sauces are not really the way I'd go, I would here. Some sort of BBQ profile wouldn't be bad - smoky sweet vinegar. In fact, one of my favorite combos might be nice - a little bit of mayo+bbq. Many would want a bit of spice, and that wouldn't go wrong here either. I dunno. I just thought bacon was an odd choice here given that it needed some sort of lubrication and flavor maybe. lol. But bacon is never *wrong*....
