Could maybe also be a problem at his side, because other MS Fight Simulator gameplay video's out there, don't have that severe choppy sound. Al-tough I've read that FSX Voip is troubled, and some pilots/towers use another voip server/client like TeamSpeak. ( So my observation might be inaccurate ). I've also read that the host ( which is also a player ) should have a fast enough PC to render the video AND also serve every other player with comms (voip). I guess playing FSX, recording the video, and serving COMM all at the same time is causing this issue?

I've never ever heard someone speak somewhat clear in fsx. Think it's the game itself as I only 'experience' bad voice chat there and not in like GTA, ETS, CoD, CSGO, Battlefield, etc.
