This looks delicious (as always). I am a big fan of Korean Bibimbop which is also a dish with rice served in a hot stone pot so it gets crispy and then mixed with all sorts of vegetables and meat. It's so interesting to see similar recipes from different regions and cultures. I'm going to have to give this a try!

i cant eat spices of most kinds like soy , fish , oyster sauce , cooking wine, almost anything . but maybe i can subsitute a bit with coco aminos (I use as soy sauce replacement), and honey. but even if the taste is different this sounds so nice i want to give it a try!

thank you I ‘ll make that recipe using chicken because I like the flavors however I must find a way not to make it in a clay pot because due to some health problems that prevent me from standing for a long time in front of the stove …what if I use a clay pot smaller than the surface the burner ? would it be possible than not to constantly have to move the pot ?..thank you for your wonderful recipes that are my references regarding chinese food .

It depends on your stove, especially if you have gas. A gas burner will always heat unevenly because of the circular shape. An electric stove is probably fine.

Claypots don't do well on an electric stove as they tend to crack. You could try with a heat diffuser, but they are not very effective. Your best option is a cast iron pot on the electric stove.

After you finished the soft top layer of rice, just add chicken stock or water to boil the crispy rice layer for 1-2 min, this is another way to enjoy the crispy rice layer of a clay pot dish.

Hi Mandy. Do I have to move the claypot around like that if both my gas stove burner and claypot are the right size? Instead if the satay sauce what else can I use? I have to research what I need to do to a new clay pot before cooking in it. I got a small one from my local Hmart years ago. It has a cute lid that is shaped like the top of a tomato, but I've been scared to use it. (Because I've never used one before, and I don't want it to explode or something from user error) Can you use a clay pot on an electric portable coil-type kitchen burner?

Another cookbook, the world is never short of cookbooks. I don't think so. Hundreds upon hundreds of recipes on KZbin and more recipes from your cookbook are necessary. I don't mean to put down(downgrade) your recipes(*) they are quite good like hundreds of them on YT. Nowadays with so many financial pressures and so many FREE delicious recipes out there on the web do you think food lovers would pay for cookbooks? I am not so sure. Anyway congratulations. * I used a few of your recipes.

you're missing out, mate. yes, there are oodles of cookbooks... but, having bought this one, it's more than just recipes. it's got a section on ingredients, and another on prep methods. every single recipe has a QR code you can watch a video with. there's history and and wisdom. and one day the power might go out - but your wok and cookbook will still work. true story. tornado took the power out for a week. i ate well. (had to use most of what was in the freezer) :)

Also I learned different types of cooking foods from YT as well such Japanese, French, Italian, etc you get my point. It is all free. No, they are different. Cantonese sweet soy sauce is subtle in sweetness. Sichuan seasoned sweet soy sauce is way sweeter and the texture is thick.

Too complicated. My wife just made a regular European vegetable soup with beef. No special seasoning, only salt and maybe spicy red pepper, just boil the beef well under pressure and add the vegetables and boil normally about 20 minutes more. Total time about 1 hour out of which total human effort is less than 10 minutes.
