Looks delicious. This is cashew chicken like it's known everywhere except the part of the world where I grew up. We had "Springfield-style" cashew chicken, which was invented at a restaurant called Leong's in Springfield, Missouri. The chicken is battered and fried like for sweet-and-sour, then covered with a gravy based on oyster sauce. (Originally it was thickened with corn starch, but I'm pretty sure the restaurant we went to when I was a kid used something else, maybe just flour, because it wasn't clear.) Cashews get mixed in, then green onions over the top are the only vegetable, so when I make it I usually serve it with simply sauteed green beans in a spicy sauce. Yours definitely looks easier because double-frying battered chicken is pretty time consuming (not to mention messy). Think I'll copy it to try next time I've got some chicken on hand. But if I make it I'll probably have to decrease the amount of chiles (which my husband calls "candies"). - Sharla

Dont put it in. For an alternative to oyster sauce due to a seafood allergy, here are a few options: 1. Soy Sauce with Sugar: Mix soy sauce with a small amount of sugar to mimic oyster sauce's sweet and salty profile. You can start with a ratio of 1 tablespoon of soy sauce to 1 teaspoon of sugar and adjust to taste. 2. Mushroom Sauce: Mushroom sauce (often labelled as vegetarian mushroom sauce) is a great alternative. It has a similar umami flavor to oyster sauce and is made from mushrooms rather than seafood. 3. Hoisin Sauce: Hoisin sauce can substitute for oyster sauce in some recipes. It’s sweeter and less salty than oyster sauce, so you might want to adjust the quantity. 4.
