We used to have a food truck with Thai food , a lovely woman from Thailand ran it for years, with her Norwegian husband. They retired and closed it down just this summer. Another corker Rik, looks absolutely Delish but sadly a bit of a challenge for me to eat this dish now with my dodgy old gnashers 🤭, however I still intend to give it a try, I’ll just replace the cashews with some bamboo shoots & water chestnuts.😋 Thanks as always 🙏 & hope you have a great weekend! I love chicken and cashew stir fry! This looks well scrumptious! Rik, do those dried chillies add much heat to this dish? Can we omit them if we cannot tolerate hot chilli? My husband used to love very hot dishes but as we have aged, he has become less tolerant

Dishes like this are very good served as a centerpiece that everyone can grab from. Bowl of rice or maybe some soba, a couple of side dish pickles or whatever, small bowl of soup, beer.... watch your fingers you might get bit :) Thanks Rik :)

Looks delicious. This is cashew chicken like it's known everywhere except the part of the world where I grew up. We had "Springfield-style" cashew chicken, which was invented at a restaurant called Leong's in Springfield, Missouri. The chicken is battered and fried like for sweet-and-sour, then covered with a gravy based on oyster sauce. (Originally it was thickened with corn starch, but I'm pretty sure the restaurant we went to when I was a kid used something else, maybe just flour, because it wasn't clear.) Cashews get mixed in, then green onions over the top are the only vegetable, so when I make it I usually serve it with simply sauteed green beans in a spicy sauce. Yours definitely looks easier because double-frying battered chicken is pretty time consuming (not to mention messy). Think I'll copy it to try next time I've got some chicken on hand. But if I make it I'll probably have to decrease the amount of chiles (which my husband calls "candies"). - Sharla

NICE. This is my "test order" at restaurants in Chiang Mai that I've not been to before. Hoisin sauce too, yes? (not in the text recipe.) A lot of places have reconstituted Shiitake mushrooms in but, Not really needed.

Dark soy is less salty,and used mainly as a coloring agent,most cooks seem to use both the light, and dark in their recipes.

I love cashew nuts in Chinese style dishes like this, I became allergic to nuts suddenly 10 years ago and it sucks. I miss the taste and mostly the texture.

@@BackyardChef I suddenly became allergic to nuts in 2013. I don't think it matters whether they are cooked or not and it's probably not worth experimenting. It's a minor embuggerance. It's just awkward because I know how good they taste :)

We need to know whether soy sauce is light soy or dark soy. I'd wager on light soy...as light soy is the soy used for cooking...but it would be good to know.

Water in meat is my biggest food gripe, ruining good food for sake of a little extra profit. Beef and Cashew is my go to Chinese usually with fried rice and a side of mushrooms in gravy. Another great dish that looks too good on the plate, a rainbow of indulgence :).

Do you think this recipe will work with chicken livers? I'm trying to up my vitamin B12 content. Oh, and my red Thai chiles are blooming nicely in the garden, so should work great in this recipe!

I just wished the Chinese restaurants around here would serve Cashew Chicken like that... If you substitute the cashews for peanuts and add a little extra chili garlic sauce...it would be the ideal Kung Pao... Plus the way they ruin Kung Pao chicken with zucchini should be a crime against the culinary world...

Dont put it in. For an alternative to oyster sauce due to a seafood allergy, here are a few options: 1. Soy Sauce with Sugar: Mix soy sauce with a small amount of sugar to mimic oyster sauce's sweet and salty profile. You can start with a ratio of 1 tablespoon of soy sauce to 1 teaspoon of sugar and adjust to taste. 2. Mushroom Sauce: Mushroom sauce (often labelled as vegetarian mushroom sauce) is a great alternative. It has a similar umami flavor to oyster sauce and is made from mushrooms rather than seafood. 3. Hoisin Sauce: Hoisin sauce can substitute for oyster sauce in some recipes. It’s sweeter and less salty than oyster sauce, so you might want to adjust the quantity. 4. Homemade Vegetarian Oyster Sauce: Combine soy sauce, mushroom broth or stock, and some sugar. You can also add a bit of cornstarch to thicken it, creating a texture similar to oyster sauce.
