Thank you so much for this easy recipe! I have been baking gluten free for myself and family for over 10 years. I cant wait to try this. I think the cookies look lovely! To those who think this much cornstarch looks weird, its definitely not! Cornstarch is widely used in gluten free baking. To those worried about so much sugar and fat, i would add: It's a treat! Cookies are normally not meant to be healthy.

@@tiakayy777 I have been gluten free for 6yrs. If you can find Betty Crocker gluten free baking mix, you can make almost anything. I even make my own mix by looking at the ingredients on BC mix box. You will have to experiment a little. I find it necessary to add unflavored whey protein to my batter (I use Jarrow whey protein) and less liquids. Bisquick pancake mix will work, but not for piecrust because if has baking powder in it. Good luck and watch your carb intake.

@@tiakayy777 if you make the recipe on the back of tollhouse chocolate chips but add oat flour (make sure it's gluten free, oats don't contain gluten but sometimes oats have traces, or so I've been told) instead of regular flour they are TO DIE FOR. Thought I had a gluten intolerance, but it turns out I just can't have much carbs in general 😭

I just pulled a batch out of the oven. Honestly, much better than I expected. A little dry and crumbly upon first bite, then they just kind of melt in your mouth. Overall pleasant texture. They are a little more delicate to handle than I expected; I expected something denser like a shortbread, but these were lighter. Sweet, but not overly sweet. They do not taste starchy at all, despite the seemingly large amount of corn starch. I think these are getting added to my list of regulars. They will fill a good niche for a nice simple "plain" cookie. I may try to add a little almond extract next time I make them, and give them a bit of a 'Christmas cookie' flavor. Thanks for this recipe! I'll be giving them a chocolate dip later after they've cooled to room temp. 2 thumbs up from me!

Brian Duane condensed milk can be infused with flavors too, so the texture of the cookie isn’t changed. I have done it with coconut and lemon zest (put in a silicone tea holder), and also just used Earlgrey tea bags for a bergamot infusion. When I used actual coconut (ground super fine), it changed the texture a bit-not bad, just different.

If you put the cookies in the freezer for 30 minutes. You can dip the cookies in your melted chocolate and the chocolate will set up as you place them on wax paper.

Why not some of each. Try a combo of a lil almond and a lil vanilla. When I make no bake peanut butter cookies, I make some almond, some vanilla, and some a combo of the two extracts. Update...These are going to be put in my recipe book. I made these today and they were a favorite at my in-laws. They did not crumble, they stayed together really well. They have a biscotti texture. These are so easy to make. Great with a cup of coffee.

Made it using sweetened condensed coconut milk. Two batches: one original flavor with rainbow designs on the inside, and the other is strawberry flavored with an edible glitter center. Both batches were pressed using a mooncake mold. They are gorgeous and I wish I could share pictures.

Homestly I only had about 3 cups cornstarch. I don't always measure things I took a chance and added a handful of cocanut which was about a cup, as a replacement for missing cornstarch but it worked out perfect and the taste was terrific! Cheers💕

Tapioca flour will work well. “Kuih Bangkit” is another cookie/biscuit that is similar to this recipe, that uses either just tapioca flour or a blend of flours.

I’d say no, because cornflour absorbs the butter in a different way from flour. The texture may also differ, although I’m not too sure.

I measured the butter before melting. I just buy sticks. 1 stick is half a cup and half of another is 1/4 cup, giving you 3/4 cup.
