Made these today with just choc chips and made them slightly larger. (Got 11 out of the recipe.) These are absolutely AMAZING!!! Best cookies (I'm in the U.S.) I've made in a very long time. Can't wait to experiment with different chips and fruits.

Hi David! Love to see a rock cakes recipe. My grandmother had some very old cookbooks that had brought cake recipes or they also called them gem cakes if they had colorful fruit in them. Most Americans will say they never heard of a rock cake and if they had a grandmother they sure have it might not know the name but they know the cookie it's more of a cakey cookie with lumps. Thank you for a great recipe that I can make easily vegan. :-)

When u said banana choc chip i thought it was fresh bananas i was pleasantly suprised when they were banana chips not alot of people like them where i live (but i absolutely love them, can eat 2 bags easy no problem) they looked amazing for sure ima make this next time i get brown sugar

Sifting the flour removes any lumps and aerates it - which helps give the interior of the rock cakes their “cakey” consistency 👍

Salted butter is fine. You can add mashed banana instead of banana chips, but keep in mind the rock cakes will be softer 👍

Hey OP Chef. This recipe looks great. Just one concern: do the banana chips soften with the moisture of the mix. Planning to serve to seniors and don't want them to break a tooth...lol

They remain crunchy, so if serving to people with dental issues, either chop them up really small or replace them with a soft dried fruit (like raisins, diced dried apricot etc) 👍
