My only issue with that episode and segment is when Jon is on his tirade. All that food that splattered and flew into the customers laps when he slammed the plates.... That had to have been setup ... Cause I don't know bout you but even IF my food had been comp'd I'd have still been pissed about those ketchup and ranch stains.... Just sayin

I've worked for a lot of restaraurants starting as a washer, into a chef, and nowadays as a head waiter. I believe the biggest issue with restaurants in general are their systems. It's relatively easy not to cross contaminate if you make sure that everything has a place, and that proper hygiene is implemented and you make access to everything necessary as convenient as possible. Not only does it save valuable time, it also makes sure that people don't get food poisoning. Another problem I've noticed is that a lot of smaller scale restaurants don't have proper staff training either. When I first started working as a chef in my younger teens during the summers there was no properly trained chefs. Since my father worked as a chef I knew a bit about what it takes to produce food and luckily I was taught to always taste the food regularly to make sure that it's up to standard and that it isn't wrong. (This is basics but a lot of chefs over time get a bit too confident). Usually it is up to the owner of the place to make sure that their staff 1. is properly trained and 2. make sure that the the people working is appropriate. When I personally dine at restaurants I usually check the bathrooms before i order anything because that way you can check how they manage cleaning and hygiene in the restaurant. If they have wooden floors in the restaurant I usually check how worn out the floor is, because if they polish the floors when necessary it shows that the owner actually invests into the restaurant and doesn't cop out to save money. If they aren't willing to spend money to make more money, it's usually a sign that more issues exists in management.

The gumbo scene reminded me of when I got food poisoning after having panera potato soup and my dad had a feeling that the chef's knew what they were doing and told the manager about his concerns about me before I threw up all over the floor 4 times. 4 TIMES! And that manager wasn't playing when I fainted afterward. I was 16 years old, and I was throwing up 4 times because of their failure. My dad told me that after I woke up in the hospital, the manager was pissed with the chefs after I threw up the first time, and he immediately fired them for a health violation. I literally felt like I was going to die that day.

ive been in ICU and almost died. I also have had food poisoning multiple times. Food poisoning is the worst. It's worse than dying. When you are about to die , you are numb and just really tired. When I went to the hospital for food poisoning the diarrhea was so bad that even eating one god damn grape on my empty -totally empty no digestive juices from throwing up constantly , from throwing up bile to dry heaving -would cause me to have an entirely liquid bowel movement. All f the diarrhea was so bad I was extremely dehydrated. When I went to the emergency room , I as a black man, had cracked , grey scaly skin from dehydration. I could not walk on my own. I was put on a gurney and given an IV. I feel no remorse for these "cooks" that taffer destroys. Hes right these mother fucking morons will kill someone with their food.

bro its was a Panera.. there is no chefs at Panera. those chain places are the worst of the worst. there is no patinate employees working in the kitchen. they are just normal people. there is never a "chef" in any chain food service establishment. the only places that actually have any type of culinary hierarchy is like a Fleming's, Ruth Chris or like a Ramsey, Emeril, Wolfgang type of chain's. and even those places are more kitchen managers than "chefs". but normal people who have no formal training don't even know they are doing things as bad as they are. most establishments only require 1-2 staff to be food safety certified legally.

I love bar rescue. It’s educating me a TON about food safety and what goes on behind the scenes. I can’t believe most don’t even do the simplest things such as wear GLOVES to prep!😖 I’m more concerned about what I’m eating moving forward….love ya Jon!

I watched Bar Rescue before working with food and I was shocked to see all these people being disgusting. What's worse is that half the people with whom I've worked are just like them. They say, "I eat it and I'm fine" and "So? They'll still eat and they'll keep coming here."

Warning: I ramble a lot. I work at Subway (first job) and even though my one is possibly a bit better than others (never seen them but we don't have to many chances to cross contaminate, and most people do wear gloves), mainly because the manager I think actually tries to make Subway look good and not have Subway be mad at our Subway and shut it down (the owners have five other Subways, my manager is their son, he runs two of their six Subways). Our Subway last inspection got a C rating from Subway guy (ceiling light was out, safety hazard of a tray type thing that goes in the speed oven had holes in it, we replaced that though now. I don't remember the other reasons other than maybe because the guy talking to the inspector didn't know that I was 18 at the time so he told the inspector that there were no adults currently working). But anyways main point I was trying to say, even though I do enjoy working there, a bit stressful at times, I wish I got paid more than 11 dollars an hour (a 14 year old, who in fairness this wasn't his first job, got starting pay of I think 13 dollars an hour, I had been working there for about a year then, once June comes than I'll have worked there for about 2 years, which they'll probably make me do a lot more since I am 19 so legally can work long hours, stay after 9pm, and work the meat slicer, and I will have finished high school), but overall I enjoy it. I don't ever want to work in food again after this though because I don't want to worry about making or being responsible for someone else's food. I think my dream job is owning a music store, so if I were to be more serious about that (would need savings first, I have no savings right now) then I should work in retail anyways. Get a slight idea about it. TDLR: Even though I enjoy my food job, I don't ever want to work a food job again after I resign because I don't want to worry about making other people's food.

Man the girl in the Mexican restaurant with the bun is GORGEOUS and I think she’s trying her best. Bartender here- she seemed to have zero help behind the bar, hence the old glasses/cans everywhere, she literally said they were out of everything, she used what she could (as far as glasses for the margarita). She def did her best and I have been in that same situation SO often. Girl, I relate and I think you are doing great! ❤

Mr. Taffer is very inspiring to me and the reason why I became very anal about a clean kitchen, cooking areas, clean utensils, everything you can think of. Behind my oven is just as clean as the rest of my kitchen and there is not a spot of dust, grease, or any food and grease splatter. My friends rib me because they think I should also wear an apron being a guy being as clean as I keep my kitchen and house, but who would want to cook in a dirty kitchen with greasy pans, griddles, and mold that ill just invite rodents and stink up the place? Someday if I am lucky and find the right girl, I'd make her very happy with my kitchen habits and my cooking skills. My cooking is the very same when it comes to prepping, too - no cross-contamination when cooking for family holidays, I wash my fruits and vegetables, I wear gloves handling meats and poultry, and above all NEVER press down on burgers I'm grilling! That should be a sin in itself to squeeze out all that favor and juice! I admit as good as my homemade pizza comes out, I still have yet to make a good pizza dough. I can make pasta from scratch my Noni taught me, but dough is still on my list of things to perfect. Frozen balls of pizza dough to me is not the traditional way of making pizza whether in the oven, or on the grill. (it comes out like pub style that way and you just place a toxic-free brick over the grill then place the pan on top of it and in eight minutes you get an amazing pub style pizza! Still have to finish building my brick oven though but can't wait to test it out!) Sorry this was long, just want to express how Mr. Taffer influenced me and hope someday I get the honor of meeting him. When it comes to a bar and grill he knows his stuff and knows how to make you make money. His track record speaks for itself, am I right?

This is the reason why in many (European) countries bars cannot serve hot food (they can only heat sandwiches or frozen meals in the microwave). To serve food you need a special certification and license.

I’ve seen a lot of filth, fruit flies, cross contamination and a bunch of other nasty stuff in this show but I don’t think I’ve ever seen toilets that don’t work. When you can’t even pay a plumber to fix your toilets, just shut it down.

I’ll be honest. I don’t really blame the bartenders, it not their fault for not having the ingredients it the owner fault for not providing them. The bartenders are limited to make any drinks when a customer ask for. And for the cooks i have no comments for that because i’m not a chef. I don’t really understand how they fail on safety procedures.

Most bartenders don't do the supply list. They can tell the front manager they're running low but it's up to the manager to go item by item and see what is low and what they need to order.
