Awesome cook T-Roy! I bought the arbor fab basket and minion starter basket for my 22” WSM, and it’s amazing how long the charcoal lasts, and provides better temperature control/stability. Amazing product and worth every penny! Very happy with it.

"That's what' I'm talkin' 'bout!" Just purchased my 2nd 3 bone plate rib from Sam's Club today. The butcher there is awesome. He trimmed some fat, gave it to me on the side so I could render some tallow.Not wagyu, but it serves it purpose. I add a wee bit of butter as well, mainly for some added salt. Great cook, TRoy! I've got an 18.5. I may investigate the basket. Cheers.

I appreciate the WSM videos! Longtime fan here. I've got an 18" WSM and 22" WSM for bigger cooks. I keep eyeing the 14" WSM for a smaller cook. WSMs are just so easy to use and hold their temps well. The ribs look awesome.

Makes me wish I hadn’t sold my little 14” WSM when I upgraded to the 22”. Oh well, but those ribs look delicious! I wish my local grocery store carried meat like that. I have to go to a specialized meat market about 20 miles away. But, it’s worth it. I have to try some of that Worcestershire sauce. That rub looks pretty good too! Always enjoy watching your videos Troy. Sorry I haven’t been around much lately. My wife demands a greater amount of my time since progressing into the later stages of dementia. Ya know, Wagyu is very rich in flavor and does make for some wonderful meat and tallow, but I honestly prefer regular beef tallow and using USDA Prime. The Wagyu is a little too rich for my taste. I find that I cannot eat much Wagyu before I get full of it. It's all good in the end though! Cheers to ya brother!

T-ROY COOKS - Hey question for ya - I wanted to ask some of the people I follow on what do you prefer: Pork Shoulder or Pork Butt ? I have not made either of them yet and I want to this week hopefully. The only 2 cookers I have so far are the Pit Barrel and the Masterbuilt 1050

Hey Dave, great question!!! I think of pork shoulder as cooking a Ham for the holidays and it's better if you cure it before smoking it. I actually have a video showing how I do it. Here ya go: kzbin.info/www/bejne/rqSTl56bmNGgbpI I actually prefer using Pork Butt for everyday BBQ because it's moist & tender and very flavorable if you inject it with lots of flavorings. The difference is that you want to slice the shoulder for ham, so you cook that to around 160-180F internal, whereas the butt you cook it like a brisket to 200-210F internal. They are both excellent, but IMO the butt is much easier to cook. Hope that helps and I truly appreciate the support! Cheers to ya Dave!

I’m originally from a small town near Ennis TX. I retired from the Army in 2019 and we decided to remain in NC and I have the hardest time finding good beef ribs. When I do find them they are so over priced due to the popularity AND EASE of electric smokers 🤣. Thanks for another great video T-Roy

I worked in a BBQ restaurant in Atlanta Ga. They only used one type of Wood, Hickory. Me personally I like cherry wood and mesquite, maybe some Oak.

@@TROYCOOKS ive been using cherry and oak for most of my smoking. makes great tasting steaks. 30 min or so smoke bath then sear on high heat till medium rare. soo good. Used to use a ton of mesquite and hickory, guess i just got tired of it. Anyone ever use Alder or Maple?? curious to see what that wood(!) taste like. My local True Value had Grapevine, Alder, Blackberry, Maple, Orange, and a few other odd ball types. The grapevine caught my attention but didnt get any, wonder what that is like.

@@justindearmond1 Maple has a good flavor. Alder is great for fish! I personally enjoy the flavor of grapevine and orange. They are both a mild flavor similar to apple or peach. My favorite mild wood is peach if I can find it locally!

Don't go shopping when you been drinking. Oh by the way. The price of cows in Florida has gone up. Any tips on just cooking the flat?
